Butternut Squash Soup
Thanks for sharing such a great recipe! Per reviews, I roasted the squash (and garlic) first, to make the squash easier to peel. The only substitutions I made were: bacon fat instead of margarine for sauteing the onion and plain yogurt instead of cream cheese (because I had it already). We had mixed reviews over this in our house... I loved it. It has a gorgeous color, a smooth texture, and an uncomplicated flavor with a bit of a kick. This is quite a spicy soup. It was too 'hot' for my three year old & I ended up making something else for her. Next time, I'll keep that in mind. My squash-hating husband didn't like it, but said I should make this at Thanksgiving (though I'm guessing he meant so he'd only have to eat it once a year! *laugh*).

Pumpkin Fudge
I followed this recipe to a "T." Everything went beautifully. However, I won't use this recipe again... I'm not even sure I'll eat the batch I made, so I'm sad for the waste of my beautiful homemade pumpkin puree. :( I didn't care for the texture or the taste of this fudge, so I guess I'll continue my search for the perfect pumpkin fudge!
