Strawberry/Rhubarb Crumb Pie

All I can say is, "Wow". I'm not usually a huge fan of rhubarb, but even I was stunned at how delicious this is. My husband wanted to marry me all over again!

Apple Jack Iowa Pork Chops from Des Moines

The sauce seemed really overpowering, yet strangely didn't flavor the pork chops much. Good ingredients, but wrong proportions. Specifically, I'd recommend cutting down on the applejack. I thought I might get buzzed just eating one serving!

Hot Italian Giardiniera

Wow, I made this to go on italian beef sandwiches, but I wasn't even sure I'd like it. What a pleasant surprise! It's a perfectly spicy, crunchy, fresh-tasting veggie topping that tastes exactly like what a good italian dressing would taste like if you could rehydrate all those little veggie flakes and eat it fresh! Amazing! I put it on italian beef, pasta, and all by itself, and it's all good. Right now I'm canning my leftovers.

Catherine's Spicy Chicken Soup

Really good. I only witheld that last star because I thought it needed 2 cans of corn and a little cayenne pepper. I'm also a little confused about the whole tomatoes.

Authentic Enchiladas Verdes

Wow, these were great. Like others, I'd recommend assembling them, topping with more sauce and cheese, and baking until warm. Very yummy, and much easier than I expected.

Baked Fennel with Parmesan

It's always exciting to have a somewhat underappreciated vegetable for dinner- not just your avereage brocolli. And I was impressed that cooking the fennel this way made it taste so mellow and sweet. However, this recipe definitely needs some more salt and more flavor. With all the fat, I just can't justify eating this unless it's completely fabulous, and it falls remarkably short of that.

Asian Salad

Great recipe- my husband's favorite! I always use a bag of slaw mix instead of the napa cabbage, which makes it so quick and easy!

Ultimate Double Chocolate Cookies

Not bad, but considering all the rave reviews, I was slightly disappointed. Although it might be my own fault- I used finely ground coffee in place of the instant coffee granules.

Bacon and Date Appetizer

These were a HUGE hit at a party I had this weekend, even among people who don't like dates. Like others, I baked these (intead of broiling) at 400* until browned. I'd suggest covering the cookie sheet in foil first- my pan was a bear to clean!
