Chef John's Beef Goulash

Wow! fantastic! I made it exactly as is, except that I didn't have quite as much beef as he called for. Also, I cut back on the cayenne. But it was soooo good! the flavors blended beautifully and if you cook it as long as he calls for, you end up with a thick and creamy sauce without any cream, flour or cornstarch. Wonderful! Everyone loved it! I'm making it again, soon! This is definitely the best recipe I've cooked off this website.

Fluffy White Frosting

Wonderful! LOVED this recipe! It is not for the novice, since it involves both beaten egg whites and making a hot sugar syrup, but it turns out beautifully! The trick: boil the sugar and water over a medium-low heat just until it clears. Stir well, and only drizzle in a little at a time while you are beating. This is harder than it looks! There were a few times where I poured in a fair bit at once (because my pan is heavy!) and I just beat it in really quickly and tried to mix it with the rest of the bowl. Don't overbeat the egg whites at the beginning. Soft peaks is fine. Then drizzle in the hot sugar syrup WHILE beating. And beat for a little while before adding more. It took me about 7 minutes in total. For people who said it never got stiff - you cannot leave out the cream of tartar! that's key here. Also, this is the kind of frosting you use within a few hours of making it. It's so fancy! and I love that there's no fat! we served with sliced strawberries and people loved dipping the strawberries into the icing! I used it for my husband's birthday on strawberry cupcakes and everyone loved it!

Quick Peanut Butter Cookies

Ok, this was surprisingly good!! I had saved this recipe to my box about 5 or 6 months ago, looked at it every now and then, but was sure it would probably not be very good. Well, it was EASY, TASTY and SUPER FAST! It only has 4 ingredients!! It's also naturally gluten and dairy-free, which means my daughter can eat it. I thought it would just be like a blob of peanut butter on a cookie sheet, but it looks like a cookie! some tips: use parchment paper, then the cookies come off super easy without breaking up. Also, I used natural peanut butter so maybe it was drier? anyway, they ended up like slightly softened balls. I didn't do the fork thing because I thought they would fall apart, but they were pretty firm. I also followed someone else's tip and let them rest 5 minutes before taking them off. Perfect!

Easy Cajun Jambalaya

Love this recipe! This is the 2nd time I'm making it in 3 weeks. Had to tone down the pepper for my family, and left out the Worcestershire sauce. Used a really nice quality chicken andouille sausage for this and it added a lot. I also grind some black pepper in because I think it adds a lot. Had some fresh thyme this week and so added a few sprigs with the chicken - I'll take it out at the end. It's funny that so many people comment that it has too much rice - I guess we're just rice lovers, because we were glad we finally had a recipe with enough rice! When you don't add as much hot sauce, the flavor of whatever sausage you use really comes through, so pick something that has a good flavor. this is definitely a go-to recipe for mid-week! and I love all the leftovers - it's enough for a 2nd meal.

Asian Lettuce Wraps

oh my gosh this was good!! I loved it! and having it in the lettuce to wrap up made it fun and added a contrast of textures. I wnet to the trouble of buying the pickled ginger and I think that really made this recipe! I had forgotten to by hoisin sauce but found a recipe for that so made it and added it too. My only change was that I had ground pork from our farmers' market in my freezer so used that instead. Delicious! and even better BOTH my teenagers loved this (and they have very different tastes!). What's more, I can easily make this gluten-free for my daughter by just using gluten-free soy sauce. thanks for a great recipe! I will be making this again. maybe weekly...

Coleslaw

this was an amazingly good and amazingly easy recipe. I'm not a big coleslaw fan because I don't like mayonnaise. My husband was making dinner and had already shredded the cabbage and carrots (he used Napa cabbage). He asked me to look for a dressing for it and this was the first I found. I didn't add the onion, but I bet it would be good, and made the dressing just as written. I used apple cider vinegar, since they didn't specify. Some reviewers have found it too sweet, but I thought it was perfect! I was so happy to have a non-mayonnaise dressing that was so good! I will definitely make it again. It's much healthier than the usual and so good. The only reason it's not 5 stars is that I just don't like cabbage that much.

Pumpkin Coffee Cake

Loved this one! it was a big hit. Light, fluffy with a hint of pumpkin and spice and a delicious topping. It was easy to make and my family couldn't get enough of it. I was glad it made two pans! I cut the sugar in the cake down to 3/4 cup as many reviewers suggested, and used all brown sugar in the topping. I also added 2 Tbs flour to the streusel to give it some crunch, and that worked very well. I like more of a cake texture so I didn't use much more than 1/2 cup pumpkin, and the resulting cake was light and fluffy. Oh, and I always substitute plain non-fat yogurt for sour cream and that worked especially well here. No loss of richness because the pumpkin kept it moist. I'm saving this recipe and will definitely make it again!
