Chef John's Beef Goulash
Wow! fantastic! I made it exactly as is, except that I didn't have quite as much beef as he called for. Also, I cut back on the cayenne. But it was soooo good! the flavors blended beautifully and if you cook it as long as he calls for, you end up with a thick and creamy sauce without any cream, flour or cornstarch. Wonderful! Everyone loved it! I'm making it again, soon! This is definitely the best recipe I've cooked off this website.

Fluffy White Frosting
Wonderful! LOVED this recipe! It is not for the novice, since it involves both beaten egg whites and making a hot sugar syrup, but it turns out beautifully! The trick: boil the sugar and water over a medium-low heat just until it clears. Stir well, and only drizzle in a little at a time while you are beating. This is harder than it looks! There were a few times where I poured in a fair bit at once (because my pan is heavy!) and I just beat it in really quickly and tried to mix it with the rest of the bowl. Don't overbeat the egg whites at the beginning. Soft peaks is fine. Then drizzle in the hot sugar syrup WHILE beating. And beat for a little while before adding more. It took me about 7 minutes in total. For people who said it never got stiff - you cannot leave out the cream of tartar! that's key here. Also, this is the kind of frosting you use within a few hours of making it. It's so fancy! and I love that there's no fat! we served with sliced strawberries and people loved dipping the strawberries into the icing! I used it for my husband's birthday on strawberry cupcakes and everyone loved it!

Quick Peanut Butter Cookies
Ok, this was surprisingly good!! I had saved this recipe to my box about 5 or 6 months ago, looked at it every now and then, but was sure it would probably not be very good. Well, it was EASY, TASTY and SUPER FAST! It only has 4 ingredients!! It's also naturally gluten and dairy-free, which means my daughter can eat it. I thought it would just be like a blob of peanut butter on a cookie sheet, but it looks like a cookie! some tips: use parchment paper, then the cookies come off super easy without breaking up. Also, I used natural peanut butter so maybe it was drier? anyway, they ended up like slightly softened balls. I didn't do the fork thing because I thought they would fall apart, but they were pretty firm. I also followed someone else's tip and let them rest 5 minutes before taking them off. Perfect!
