Quick Peanut Butter Cookies
Ok, this was surprisingly good!! I had saved this recipe to my box about 5 or 6 months ago, looked at it every now and then, but was sure it would probably not be very good. Well, it was EASY, TASTY and SUPER FAST! It only has 4 ingredients!! It's also naturally gluten and dairy-free, which means my daughter can eat it. I thought it would just be like a blob of peanut butter on a cookie sheet, but it looks like a cookie!
some tips: use parchment paper, then the cookies come off super easy without breaking up. Also, I used natural peanut butter so maybe it was drier? anyway, they ended up like slightly softened balls. I didn't do the fork thing because I thought they would fall apart, but they were pretty firm. I also followed someone else's tip and let them rest 5 minutes before taking them off. Perfect!
