Amazing Pork Tenderloin in the Slow Cooker

Super delicious! Was looking for a healthy Easter meal to cut down on calories and this fit the bill! 4 stars, not 5, why? The fresh garlic was a little heavy at 3 tbsp. I will lessen to 1 tbsp. next time and may substitute for something other than dry onion soup mix to be a little heathier. Also, I will add a little bit of a spice rub to the top. Used an extra lean pork tenderloin and it was super tender and not dry in the least bit. Other than that, served with some small red potatoes and a delicious salad and we had a yummy, healthy Easter dinner that didn't feel low-fat! Great recipe!

Easy Meatloaf

Such a great simple recipe. I've made a couple of meatloaf recipes in the last weeks looking for the taste of this one! 4 stars because I changed it up just a little bit. So easy, threw all of the ingredients into the Cuisinart and added two cloves of garlic and a little salt and pepper. Threw it in the loaf pan with the the topping and cooked it for an hour and 15 minutes -- it was perfect! So glad to have finally found this staple recipe - next time I'll be making this with turkey and adding a little heat with some jalapenos or red pepper flakes.

Pumpkin Pie Flan

Great recipe. The four star rating is only because I changed the recipe a bit. I used regular pumpkin filling and added my own spices. I make a lot of flans, so I also like a creamier taste and ended up adding the whole 10 oz. can of condensed milk. The flan came out very light and was incredibly easy to make. Next time, for a denser flan, I may substitute some or all of the evaporated milk with 1/2 and 1/2. Will make it less fluffy and more flan like. To the user who had a hard time getting it out of the pan - use a pyrex dish or loaf pan and a bit more sugar (1 cup) in the carmelization part in the beginning and be sure to coat the pan completely. This will help the flan pop right out of the dish and then there's a little more syrup to drizzle over the flan for a yummy presentation. :)

Banana Crumb Muffins

Great, no fail muffins! As one reviewer mentioned, make sure you combine until just moistened. I actually got 12 out of this recipe, and the crumb topping was just enough. I added a cream cheese glaze/drizzle and they were quite possibly the best muffins I've ever made. I bake a lot and have been trying to branch out with some new recipes - so glad I tried this one. BTW, I didn't use muffin papers, but lightly oiled the muffin cups. I read recently that paper liners sometimes do not distribute the heat correctly leading to uneven baking.

Perfect Pumpkin Pie

So good! I had never tasted or much less made a pumpkin pie before this, but decided to after tasting one at a Thanksgiving work party. I was not disappointed with this recipe. I followed another user's suggestion of cooking the pumpkin with the spices and cooling before incorporating the eggs and condensed milk. This did not taste canned at all! I've actually made three pies this past week for friends and family. I think this actually tastes great cold, but it's just as easy to warm up so everyone at the table is happy! h, and did I mention how incredibly easy this recipe is?

Caramel Apple Jam

Amazing! I made this as a Christmas gift, and it was so appreciated. Thanks for the awesome recipe! I actually made the jam two days before Christmas. Just a note: The jam takes two days to fully set and I found that I added a lot more than half a cup of water to the apples. If you need to, add water little by little until you achieve the right consistency. I also mashed my apples at the the end of their cooking to make sure the jam was not to chunky.

Dark Chocolate Cake I

So disappointed!!! After much recipe research, made last night for Valentine's Day and ended up throwing it out! The cake completely fell apart after being cooled for two hours and was a mess when I cut and frosted it. The texture is not firm enough for a solid layer cake. I gave it two stars because it really does taste good, but as far as being easy, it just doesn't hold together well for a presentable cake. Still on the search and looking for the ultimate chocolate cake recipe to keep in my recipe box!

Blueberry Cream Muffins

These muffins were terrible! If you are looking for sweet, moist muffins this is NOT the recipe. This recipe produces more of a consistency close to that of an Irish Soda bread. I also noticed that many reviewers who gave this recipe 5 stars also changed the recipe completely around!!! Although the muffins were very attractive, the sour cream seemed to settle on the bottom portion of the muffin cup and produced a strange taste.. The "To die for blueberry muffins" on this site are way tastier for a sweeter, lighter muffin taste.

Pumpkin Muffins II

Very good recipe. Perfect for this time of year. I Used the canned pumpkin as well...the batter was delicious! The only reason I gave this recipe 4 stars was I think the baking time is a little off. My muffins seemed a teeny bit overdone at 20 minutes. I think 17-18 would have sufficed, they rise quickly. Very tasty, and I think I will experiment with low-fat versions with yogurt and eggbeaters...

Brownie Caramel Pecan Bars

Delicious! I've been making the Baker's One Bowl Brownies for years, passed down from my Mom, but these are my new "specialty brownies"! After all was finished, these are amazing brownies, both aesthetically and "yumm-illy"! These are definitely not for those who are looking for anything less than decadence. I eyeballed a little bit more flour in the batter, for a bit more richness. Use the caramels recipe on this site for even more of a homemade taste! I cooled the brownies on the counter on a wire rack overnight. In the morning I put some wax paper on top and gently pressed the pecans into the caramel to set, then but put them in the fridge for an hour while I got ready for work, took them out and cut them into the prettiest chocolate brownie squares ever! I have to say that I was a little hesitant putting the caramel on the top while the brownies were hot, but with a little patience, it works fine- you HAVE to wait a day (or overnight) to eat these. Also, no need to line the pan. Use a non-stick pan 9" square pan and grease very well (I didn't flour either)and the brownies will come out great and very clean after refrigeration. Next time, I will drizzle the extra caramel over the top of the pecans as well. I will still stick to my classic Baker's brownies recipe because it is such a staple in my family, and it is a differnt type of brownie, both are equally as delicious, but these are great for a special calorie-laden treat. They look bakery made and taste even better.

Pineapple Salsa

This is the best recipe!!! It is a really great summer dish and has a nice fresh test. Make sure that you only try this recipe if you like cilantro and cumin...it really comes through. I've also found that canned pineapples will work if you are unable to get fresh. This also tastes great over greens, the possibilities are endless.

Urban Legend Chocolate Chip Cookies

I love these!!! I've been making these for about a year and without fail I always get compliments. The only thing is they are very textured cookies, so you can almost see the oatmeal, but I'm an oatmeal lover. This is an extremely versatile recipe. I've switched the ingredients to walnut, cranberry and white chocolate and pecans and butterscotch. This is one of my favorite recipes and it always bakes a pretty cookie.

Lemon Filling

Would definitely call this an "orange filling". I was a little disappointed. It seemed more fluffy than a cake filling should be, and the cake was wobbly with this filling inside, which made it more difficult to ice, a little too sweet as well. I probably will not use this again.

These are quick and easy appetizers!!! The only thing I noticed was that they were a little salty... And if you are in a rush, the pre-made phyllo dough cups in the frozen food section at the supermarket prove to be a cinch!!!

Sunflower Oatmeal Cookies

I made this recipe and liked it, but I think I should have left out the coconut. It took away from the flavor of the sunflower seeds. Next time I make this recipe, I will definitely add 1/4 cup more of the seeds and raisins.(It feels like it is missing something) I think it will make the cookie more complete. Otherwise, good recipe!
