About this Cook
I am the mother of three wonderful children. My girls are 14 and 4. Our only baby boy is heading towards birthday #2 in May!! I work from home and love to cook good meals for my family.
My favorite things to cook
My family is a little picky when it comes to their food, so my main dishes include chicken and pork. I try to sneak in meatless recipes and more hamburger ones too. They will try it if it's the only thing to eat!!

Balsamic Roasted Pork Loin
No one really cared for these. It may have been that I ended up cooking mine in the crock pot but the flavor was a bit off for my family. And the steak seasoning was way over powering. I added chunks of potatoes to the pot, as there was room and it sounded good. This just wasn't for us. Thanks though.

Chicken Cordon Bleu-ish Grilled Sandwich
yum! I took some seasoning blends that I had made up from another recipe ((sorry, have no idea what the blend is)) and coated chicken breasts with it. Grilled them on the George Foreman, adding the ham and cheese. Kids wanted mayo, husband coats all in ketchup and I did the BBQ sauce. All were happy. Such a simple idea but I sure never thought of it! Thanks!!

Chicken Fajita Melts
Overall, pretty good. I changed a bit as some of my ingredients weren't available. I used a small can of tomato sauce for the juice...didn't seem to matter. I also had to make these in tortillas...as my bread ended up having a hole. I am excited to try this again on bread!!! ((My family ate these up so it is a great recipe for us!!))
