Spicy Roasted Potatoes

Simple, affordable, delicious! What more can you ask for? I used frozen cubed potatoes because that was what I had on hand, tossed with olive oil, shook with a Tbsp of homemade taco seasoning. Delicious! All 5 of us loved them which makes it a keeper in our house:) Thanks for this simple side dish that spices up basic potatoes!

Waikiki Cornbread

WOW!!! Changed my world when it comes to cornbread. So sweet and buttery with still that familiar taste of cornmeal to balance it all out. Made this yesterday with plans to serve it at dinner. Decided to try it warm out of the oven and almost couldn't stop myself from eating piece after piece! The only thing I did different from the written recipe is use homemade baking mix. This will definitely be making many repeat appearances in my house.

Fried Zucchini

I actually followed Jenelle D's suggested recipe, egg wash plus 1/2 c cornmeal with salt, pepper, onion powder and garlic powder. I also added my own little twist of paprika to the mix, and it was delicious!!

Extra Easy Hummus

After reading some of the reviews I cut the cumin in half, added some lemon juice and a pinch of roasted red pepper flakes. Yum!

Chewy Coconut Cookies

Buttery, sugary, and just the right amount of coconut...pretty much perfection! Simple to make and basic ingredients make this a great go to cookie. I would definitely stick to the higher cooking time, I needed to bake for 11 or 12 minutes using teaspoon sized dough balls.

Nacho Chicken Casserole

This was husband raved about it!!! I was skeptical putting it into the oven because it looked disgusting but it came out cheesy and flavorful. We don't like green chilies so I substituted tomatoes and next time will put in black beans as well. Instead of mozzarella cheese I used pepper jack which seemed more fitting with a southwestern theme. This will definitely makes its way into our rotation!

Simple Mexican Rice

Instead of white rice, I used brown. Other than that the only changes I made were to cut back the cumin to 1 tsp instead of 1 Tbsp. I also didn't have any tomato paste or sauce so I used 1/4 cup of salsa. Delicious!!
