Easy Mexican Casserole

Used black beans in place of chili beans, added a can of mexican corn and green chilies and used less sour cream. Very tasty!

Broiled Tilapia Parmesan

I add a bit of fresh garlic as well and always buy the inexpensive Swai fillets. The broiling directions are spot on. Flavorful, juicy and delicious!

Chicken Enchiladas V

Pizza Without the Red Sauce

I didn't have any of the sun-dried tomatoe pesto but didn't need it. I mixed up the garlic sauce and spread it on crust. Used crumbled italian sausage, sauteed fresh mushrooms and garlic, and lots of italian blend cheese on top. Delicious!

Pasta Primavera with Italian Turkey Sausage

The basil flavor in this dish was delicious. Loved it, loved it. I used lots of mushrooms and basil and didn't have any tomatoes handy so I used a can of tomato paste and that worked really well. Lots of diced sweet onion and garlic too. Thanks for a great recipe!

Artichoke Bruschetta

Outstanding! I toast the bread in broiler about 2 min before adding the topping and broiling until a little brown. I have used the italian blend cheese the last several times and its worked great. Awesome recipe, a real crowd pleaser!

This is an excellent sauce for salmon- I always use half mayo and half sour cream per the other reviews. My mom even likes this and she doesn't care for salmon.

Peanut Butter Bars I

These were definitley tasty- just got a bit gooey at room temperature. The peanut butter layer was more runny than I had anticipated, we had to use silverware! One suggestion, if not the grahm crackers, you could use rice crispies.. I make a similar a recipe in which I use rice crispies cereal and it also adds a nice crunch.

Chicken Pesto Pizza

Excellent and easier to prepare than I thought. We used to buy chicken pesto pizza at a local restuarant before it closed down.. homemade was even better! I used shredded italian blend cheese.

No Bake Peanut Butter Pie

Oh, yum, yum, yum! This pie was delicious and incredibly easy. I used a store-bought oreo pie crust and used an extra fourth cup of Peanut butter. To top it off, I sprinkled the pie with peanut butter and semi-sweet choc chips, as well as whipped topping.

Angel Chicken Pasta

This recipe was outstanding.. I have made it several times and changed a couple things this time around. Instead of baking the chicken this time, we put it on the grill to save on time. I then transferred the chicken to a baking dish and poured the sauce over the chicken and let it simmer for about 15 minutes. I also added fresh sauteed mushrooms to the sauce. Excellent!
