Orange Pork

Ok, this is how I changed it up and everybody loved it! Rather than just regular oj, I bought frozen concentrate oj and then when making it, I only added in one can of water (directions call for 3 cans of water to 1 frozen oj)...making it a much higher concentration than for normal oj. I also used brown sugar and 1/2 the soy sauce, but doubled the sauce overall. I marinated the pork in a portion of the sauce for an hour. I think the heavier concentration of orange in the flavor was wonderful.

Arti-Cheesy Chicken

This was very good, but I made a few changes. Instead of artichoke hearts I put in broccoli florets and I used turkey bacon and half and half to cut out some of the fat. I served it over pasta. Very yummy.

Spinach and Tortellini Salad

I used fresh spinach (didn't cook) a "low fat" salad dressing (about 1/2 what the recipe called for), and just a little bit more parmesan cheese. I also added the pine nuts. This was a huge hit and a perfect side dish for a summer grilled chicken dinner.

Rory's Most Wonderful Corn Bread

Nice alternative to standard cornbread. Very moist. My little girl turned up her nose at the "green stuff" and the onions, so I don't think its too kid friendly. But great for adults.

Grecian Pork Tenderloin

Great Grandad's Sugar Cookies

These made wonderful, stay-soft sugar cookies! We made Valentine cookies over the weekend and this is by far the best sugar cookie recipe ever. Very light, not too sweet, cookies!

Aussie Chicken

I followed other reviewers advice and sauteed the mushrooms in red wine and butter before topping the chicken breasts. Also, used no fat miracle whip and turkey bacon and cut the cheese to less than 1/2 recipe called for. Because everyone said how much extra sauce it makes, I actually cooked 6 chicken breasts with the same recipe. All the guests loved it!

Spinach Chicken Parmesan

This was great! I followed one of the other reviewer's advice and added Swiss cheese on top of the chicken before Spinach mixture and added some seasoned breadcrumbs. Overall a great recipe - even for those who won't normally eat spinach!
