Fisherman's Quick Fish

this was just okay for me. I used tilapia and salt and vinegar chips but I wish I stuck to regular chips. For some reason the vinegar flavour was weird. Maybe it was the fish. I made my own creamy italian dressing. I may try it again but with plain chips and another type of fish.

Best of Everything Veggie Burgers

excellent! couldn't believe my husband thought they were really good even after he wasn't impressed with the thought of them while i was making them. I used up whatever mushrooms I had-ended up being a whole cup of shitake, and I omitted the cumin- chili powder already has cumin so i didn't want it to be too strong. increased the cheese- blend of mozza, cheddar. I used a lot more breadcrumbs as i found it hard to form into patties because it kept breaking, but once cooked and cooled, they were fine. Made way more than 6- more like 12-14 patties. We ate them with a touch of mayo, lots of avocado and tomato and they were fantastic! DIdn't even need a bun!

so good! slightly decreased the sugar and used pecans since i didn't have walnuts. added nutmeg and vanilla as suggested. Husband and kids loved it.

very good. My kids loved it. I love the sour cream in it. I made it a second time and added a bit of a bechamel sauce i made with mustard powder, paprika and minced onion and it was amazing- elevated the flavor.

Gluten-Free Yellow Cake

i was not expecting this to be as good as it was. the best gluten-free cake i have ever tasted. followed reviewers suggestion to mix milk with rice flour (i used brown rice flour), added 1/2 cup cocoa powder and an extra 1/3 cup sugar. made into 17 huge cupcakes and frosted with chocolate fudge frosting- they were heaven.

Zesty Vegetarian Sweet and Sour Meatballs

These are crazy good. The meatballs and the sauce are outstanding. I thought the batter was much too soft, so i added an extra 1/4 cup of cornflakes. It was still too soft and the balls all "melted" together when I baked them so it turned out more like meatloaf but so delicious. Maybe next time I will use 1 1/2 cup of cornflakes, or only 4 eggs. I used a lot more onion and replaced about 1/2 cup shredded cheese with cottage cheese. I also added the sauce after about 25min so it would cook longer. I wouldn't cook it more than 40min next time, since it was a bit dry at 50min. This is similar to the vegetarian sweet and sour meatballs but uses cornflakes and your own seasoning instead of breadcrumbs. They are both delicious and very similar but I prefer to use the organic cornflakes cereal instead of seasoned breadcrumbs which is often filled with unhealthy ingredients. Next I will try them in a tomato sauce. Can't wait to make them again!!

Carrot Burgers

I would give these 3.5 stars if I could. They were good but could use more flavour. I had difficutly making patties out of the mixture- probably had too many carrots and it wouldn't stick together. I ended up adding a variety of shredded cheeses, oiled a 9x11 pan, and baked at 350 for 25min. Could have used some more moisture, but a good recipe to play around with.

I used cherry tomatoes sliced, omitted the green pepper, added an avocado diced, lime juice and lime zest and it was outstanding. Definetly needs the lime and avocado.

Garbanzo Bean Chocolate Cake (Gluten Free!)

this was pretty good. i would give this 3 1/2 stars if purely based on taste, but it gets 4 stars for being gluten free and for its use of chickpeas. i added vanilla and served with fresh strawberries with a touch of sugar and lemon to make it a bit saucy. I think I will try it again and add some whole chocolate chips and maybe even chopped walnuts into the batter.

The Best Banana Pudding

yummy. this is very very good. My only issue is that it is made with cool whip which is soooo bad!! I am going to try making it with real whipping cream. I would also suggest slighlty decreasing the condensed milk as it is a touch too sweet for me- a kind of syrupy sweetness.
