stay at home mom of a 9 month old; i find that now i have to time to devote to being in the kitchen, and my daughter is already a great little sous chef!!

i love baking cookies, cakes, and breads..i think a house isn't a home unless it smells of something delicious in the oven!! i tend to cook with chicken a lot, as well as soups and stews..

i tend to burn chocolate everytime i melt it..i'm one of those people who refuse to use a double-boiler and opt for the microwave, and i suppose that is why the double-boiler is a good idea haha..

Delicious Ham and Potato Soup
this soup is really good and easy: i doubled the recipe for more people and everyone said it was wonderful..i baked the potatoes for about half an hr to give them better flavor, added slightly cooked bacon (with the grease), as well as a can of corn and some dill...i also made the "stock" earlier in the day, refridgerated it, and then all i had to do was make the milk mixture, combine it and heat it so that the soup was "ready to order" when it was time to eat...

Ghirardelli(R) Triple Chocolate Truffle Cake
wow!! this cake is INCREDIBLE!! it is so amazing - no words can really describe the deliciousness that is this cake!! the only thing i did differently was grate a few white chocolate chips, as i didn't have a bar on hand...after consuming two pieces, i went back and had a peek at the calorie content and silently screamed inside (hehe)..but this is definitely one cake i am willing to consume extra :)

Italian Style Pork Chops
my husband loves these, and gets excited when i say i'm going to make them.. i always make the full amount of coating, use half on the pork chops, and then freeze the other half for another time (i've had it in the freezer for over a month at a time and it stays just as good) this coating also works really well for fish (i've used it on pickerel and perch)
