Irish Shepherd's Pie

Delicious! I watched the video and then made the recipe. I used ground turkey and low sodium chicken stock for the liquid. The rosemary went very well with the turkey. I forgot to add the ketchup, but I don't feel like it was missed. I only had extra old white cheddar, but that worked too. Definitely a keeper! I will try it with the lamb one day when I have it.

Juiciest Hamburgers Ever

There was nothing special about these burgers. The taste was very bland. I followed the recipe exactly. I have made better burgers by throwing in a few different spices here and there. They were juicy -- but not the least bit flavourful.

Chocolate Cupcakes

The only changes I made to the recipe was to reduce the sugar by half and I used 1/2 milk and 1/2 buttermilk. I decorated them with Vanilla Buttercream Icing, a few chocolate sprinkles and pumpkin gumdrops and took them to a Pumpkin Carving party! Everyone loved them!

Strawberry Pie II

Very nice and easy pie to make. I made a crust earlier and when it was cool, brushed it with 2 squares of semi-sweet chocolate that I melted in the microwave. I popped it in the freezer to harden and prepared the strawberries. I used 3/4 c sugar as the recipe suggested for the glaze, but would use less next time. I used way more strawerries than in the recipe and did like other reviewers suggested and used less strawberries for the glaze and more for the pie -- a 3 to 1 ratio. I sliced the strawberries in half and placed them cut side down in the pie shell and piled them on top of each other. The glaze was pretty easy to make - the only thing I did was use my braun multi-practic to puree everything once it was cooked. I took this to a BBQ and everyone loved it. I think I will do this same thing with peaches as I think it would work well too.

Cola Pork Chops

Nothing special. I did the 1/2 and 1/2 with BBq sauce and ketchup and omitted the sugar as BBQ sauce and ketchup are full of sugar as is the cola that goes into it. Probably wouldn't make this again.

Indian Chicken Curry (Murgh Kari)

I made this after reading the positive reviews, but this was terrible! I followed the recipe exactly. I love Indian food, but not this recipe. I even like really spicy food, but this was just bad.I ended up rinsing off the chicken and making another currie dish with the chicken. I don't usually write bad reviews, but I had to for this.

Mouth-Watering Stuffed Mushrooms

I gave this recipe 5 stars because it was easy and it was yummy. I made these on New Year's eve to take to a small gathering. Everyone loved them. I added about 1/2 tsp of thyme to the cheese mixture and did not add any seafood (although they would have been delicious with seafood). I sprinkled some breadcrumbs and paprkia on the top along with some parmasean. The hostess popped these in the oven when I arrived. They didn't last long!

Lime-Marinated Grilled Salmon

Very nice. I made this the other night using a salmon fillet. The only change I made was I used a fresh garlic clove that was minced. I poured it over the fillet and let it sit for about 15 minutes, and then popped into a 425 convection oven and baked it covered in a casserole dish. Served with basmati rice, oven roasted carrots and mixed veggies. A very nice, quick easy meal. I think the sauce would make a nice dressing for a salad too.

Roasted Squash Soup

I peeled and sliced a butternut squash in half and roasted it along side a bulb of garlic, one onion quartered and 1 red pepper sliced up. I brushed the veggies with a bit of olive oil. When everything was done I pureed them together with my hand mixer (braun multi-practic) and added chicken stock. It tasted really good at that point with all of the roasted vegetables but I also added a 1 tablespoon of mild curry paste and 1/4 tsp of cinnamon and let it simmer for 10-15 minutes. I served it with a small dollop of sour cream. It was delicioius!

Barbecue Ribs

Very nice. I boiled the ribs to start, like I usually do and what others had suggested. I made the sauce, and the only difference was that I used Thai Chile Sauce and omitted the rum. I baked them in a roasting pan in the oven covered in sauce for 30 minutes and then rotated the ribs in the pan and cooked for another 20 minutes @ 400 convection. I served these to company and they were a hit!

Grilled Chicken Thighs Tandoori

Excellent! I halved the recipe as I only had half the amount of chicken thighs. I used all of the spices and marinated the chicken for a couple of hours and baked it uncovered in the oven on convection @ $425 for 25 minutes. I served it with plain basmati rice and a chickpea/tomato dish from this site. Very good. I will definitely make again and do it on the barbecue.

BBQ Pork for Sandwiches

Very good and easy to make. I used a pork roast. I poured 1/2 of the barbecue sauce into the crockpot with the beef broth and left it to cook for 8 hours. I then removed the pork from the crockpot and shreded it and placed it in a casserole dish in the oven with the rest of the sauce and a little of the broth from the crockpot for 30 minutes. I took it to a potluck and it was a hit!

Absolutely Fabulous Greek/House Dressing

Excellent. I scaled it right down to 4 and it was great. I discovered I was out of Red Wine Vinegar, so I used a fresh lemon juice instead. I also used a garlic glove and ommited the onion powder. I then used it on a greek pasta salad. This is definitely a keeper!

Grandma's Gingersnap Cookies

I just made a batch of these, and they are delicious! I used becel margarine instead of shortening. I didn't have ground ginger, so I grated a peeled ginger root and used that instead. I'm not a big cinammon lover, so I rolled the cookies in sugar. They were wonderful!

Black Bean Vegetable Soup

Good soup on a snowy day! I didn't have carrots. I added 2 tsp of cumin as I really like the flavour. I used one tin of Campbells' Vegetable Stock and a 28oz can of chopped tomatoes. I forgot to add the corn. I let the soup simmer for an hour and mashed it up a bit. It was excellent! I'm looking forward to the leftovers.

Grilled Salmon I

Very nice. I made this for a BBQ I had on Canada Day. I didn't have the lemon pepper and forgot about the garlic. I only used the soy sauce, brown sugar and 2 tbsps of olive oil. I marinated the salmon steaks for about 45 minutes and popped them on the BBQ. They were a hit! I served this along with grilled asparagus (tossed in olive oil, salt/pepper & a squeeze of fresh lemon), a tossed salad, brown rice and some fresh bread. It was a nice light dinner on a really hot day.

Chocolate Cavity Maker Cake

Very good. Easy to make and tastes great! I did this as my Easter Dinner dessert. I also took a small bag of unsweetened frozen raspberries, 2 tsp sugar, 2 tbsp of cornstarch and 1/2 cup of water and cooked this up on the stove. When we had the cake I spooned the raspberry sauce on top. It was a hit! The cake was moist and chocolatey and the raspberries were a bit tart so it was a very nice combination. I'll definitely make this again.
