Excellent recipe! I tweaked it, as always, but my modifications still tasted great. My chicken was 5.6 lbs, so I cooked it longer. I used garlic powder rather than onion, put onion slices under the chicken, 3 whole celery sticks inside plus 3 shallots inside the cavity (would've used garlic but I was out) and then carrots and potatoes surrounding the chicken in the roasting pan. Delish! SUPER moist with a nice crunchy skin. I am looking forward to the leftovers, which will be chopped and made into chicken & rice casserole!
