Juicy Roasted Chicken

Excellent recipe! I tweaked it, as always, but my modifications still tasted great. My chicken was 5.6 lbs, so I cooked it longer. I used garlic powder rather than onion, put onion slices under the chicken, 3 whole celery sticks inside plus 3 shallots inside the cavity (would've used garlic but I was out) and then carrots and potatoes surrounding the chicken in the roasting pan. Delish! SUPER moist with a nice crunchy skin. I am looking forward to the leftovers, which will be chopped and made into chicken & rice casserole!

Marinated Baked Pork Chops

My family LOVED these! I made the sauce as directed except I doubled everything but the oil. I used only 3 TB instead of 4 for a double recipe. I also used 1.5 lbs pork chops, which was 3 large chops plus one tiny one. They were about an inch thick and delicious. Towards the end of cooking, I poured out the thin liquid and broiled it until it was a little less liquidy. Delish! My husband is requesting this again!

Fruited Curry Chicken Salad

I made this with a few changes. I consider what I made loosely based on this recipe, just out of necessity. I used: Trader Joe's canned chicken, NO celery (was out), dried cranberries instead of raisins, NO grapes, hazelnuts instead of pecans and a mix of mayo/greek yogurt. Very yummy! I wish I had been able to make it as published...I am sure it would be awesome too. Thanks for posting this!

Barbie's Tuna Salad

I had to make a few adjustments due to not having all the ingredients. I used onion powder instead of dried flakes, no dried parsley, only 1/4 tsp dill weed and only 3 TEASPOONS of relish instead of tablespoons. It came out delicious!
