Apple Cider Biscuits

I couldn't taste any of the apple cider and I used the correct amount. It just tasted like a bland biscuit. Maybe it was the brand? The biscuit was moist and the texture was great, but the taste was just not there.

Marbled Pumpkin Cheesecake

I cheated and bought a store-bought crust. I did add ginger in place for the gingersnap cookies and adjusted a few things and it tasted great. Here's what I changed: 1 tbsp cinnamon, 1/2 tsp nutmeg, 1/2 tsp ground ginger, 1/2 tsp ground cloves. I also tried to place a pan of water in the oven to increase the humidity but it didn't seem to make a difference with the cracking. May have done it wrong but it didn't matter. The cheesecake turned out great. It was a hit at my house :)

Turkey Goulash

This was easy and delicious! I also made a few changes. I added 1/4 tsp of cayenne pepper, half of a chopped onion, 1/4 tsp dried oregano, 1/4 tsp of thyme, fresh basil instead of dried. And to add flavor to my noodles, I always boil them in chicken broth. Everyone loved it.

Mushroom Sauce

In addition to all of the other ingredients, I added 1/2 cup of orange bell pepper (just because I had some in the fridge), 2 cloves of garlic, and a pinch of cayenne (we like spicy). My family devoured it.

Colorful Vegetable Fajitas

Yum! I added some baby belly mushrooms and 1 yellow bell pepper. And did one cup of salsa (instead of the half cup)to the mixture because I added more veggies. Served with black beans, avocados, cilantro, and limes. Delicious!

Vegetarian Chili

I didn't have any hominy or canned green chilis on hand so I subbed half a jalapeno pepper and a sprinkle of cayenne. I also added a chopped green bell pepper. Topped it with cheese and cilantro and served with corn bread muffins. It tasted great. I think next time instead of using a 28oz can of crushed tomatoes, I'll use one 14oz can of diced tomatoes and another 14oz can of of crushed. I like having the chunks of tomatoes in my chili.

Sweet Potato Soup

I didn't have any white potatoes so I just used all sweet potatoes. Also threw in a chopped onion. This soup was easy to make and very tasty! We served this with grilled gouda and mozzarella cheese sandwiches. YUM!
