Garlic Chili Prawns

Grilled Salmon I

I really like this recipe - I already have been using it for a variety of meats on the grill. i'M giving it 5 stars even though I made quite a few changes, just because its a good starting point for your own additions. I added lemon zest and some lemon juice to the marinade, as well as one tsp of sesame oil, minced garlic and finely grated ginger. I used spring salmon fillets and marinated for 6 hours in the fridge, and then baked the fish in a hot over, in a foil wrapped dish. I also didn't drain the marinade, nothing wrong with pouring a bit in the baking dish to give it moisture. It really came out moist and flavourful.

Almond Wild Rice

Everyone absolutely loved this dish! I added a finely chopped small apple to the almonds while sauteing them in the butter, and I think it added a little extra moisture. Its a pretty flexible recipe I think, next time I want to try pecans instead (or together with) the almonds.

Italian Cream Cheese and Ricotta Cheesecake

I enjoyed the flavour of this cheesecake, but the texture was a little bit too dense for what I was looking for. I thought having the ricotta would make for a lighter cake. I got rave reviews from my guests. Next time I think the temperature should be lower - maybe 325. I got a deeply cracked top and slightly browned edges, but not enough to affect the flavour - I trimmed the golden brown edges anyway, and covered in cherry sauce with whipped cream, so no one could tell.

My guests really enjoyed this appetizer. The feta cheese is pretty salty so next time I'll omit adding any extra salt to the spinach mixture.

Pierogi Casserole

Yum! I tweaked this recipe a bit, like another reviewer I prefer a thicker piece, so I made more mashed potatoes. I also stirred the onions and garlic into the mashed potatoes. I alternated potato, bacon, noodle and cheese in that order, X3, and also covered the dish with foil. I would also recommend baking for at least 45 minutes, 30 is not enough to warm the centre and melt the cheese topping.

Crispy Fried Chicken

Great recipe! I think that the lid should be kept off during frying though...I made a batch with the lid on, and then one with lid off and the second one was crispier. I also marinated my chicken in a tabasco-salt water marinade for a couple of hours before preparing. I like to season my flour as well.

Beef Stew VI

A great beef stew! This is the first time I've made it without using a can of tomatoes. We like spicier food in our family so I dredged my meat in a spiced flour mix (paprika, garlic powder, black pepper). Also, its a good idea to salt the stew only at the end of the cooking time. I used 3 pounds of good steak...decadent, but so worth it.

Chicken Pot Pie IX

BLAND bland bland. Sorry, it looked beautiful out of the oven, and my husband liked it....but I found it quite flavourless. I doubled the sauce part as recommended by other reviewers, and added poultry seasoning and garlic salt to mine, but it didn't do the trick for me. I'm not a huge chicken pot pie fan to begin with, and this recipe did not convert me. I would think that it needs some fresh herbs to make the flavour more interesting.

Pumpkin Cake III

I enjoyed this cake. I baked it in a bundt pan and it needed about an hour to cook through with a great golden brown top. I just dusted mine with icing sugar as the cake is rather moist and sweet, so it doesn't require an extra flavour of icing. I also added 1 tsp of grated orange rind & half tsp ground nutmeg & clove to mine, because I like the spicy citrusy flavour. I couldn't even detect a strong pumpkin flavour (which is good!).
