Tzatziki Sauce I
Excellent tzatziki sauce! I followed the recipe as written and it was superb. I would recommend you prepare this ahead of time so the herbs and spices have time to infuse throughout the sauce. I used Greek yogurt and added seeded, finely diced cucumber. This was great with feta cheese on a gyro sandwich!

Peppy's Pita Bread
I took these to work and many people asked me for this recipe. Great tasting pita bread. Tips: Since I didn't want to take all morning making them, I prepared the dough the night before, up through the step where you roll it out and cut into 8 pieces. I individually wrapped those in plastic wrap loosely and refrigerated over night. The next morning, I quickly rolled them out and popped them in the oven. For those that have trouble with them puffing up, I suggest you handle the dough like you would pie crust dough: refrigerate the dough until chilled, and avoid handling them with your hands as much as possible when rolling them out. I used my marble rolling pin. Also, for a nice flavor, just before baking, I spread the dough on both sides with a light coating of olive oil.

Party Italian Wedding Soup
Fabulous recipe! One of those very simple recipes you can get the broth started, the meaballs formed and save for later. Then when you're ready, in just a few minutes it's done. The first time, I followed the recipe just as written and it was great as is. However, since I like to experiment, I changed just a few things. I used a mixture of ground beef and Italian sausage, with some parmesan cheese for the meatbals; I substituted kale for spinach (which incorporated into the soup better-it didn't float and stay at the top like spinach, nor did it give a green color to the broth) and because the chicken seemed to be an overkill on the meat, I omitted that. I added a little bay leaf in the broth too. But these are just small preferences and, like I said, it's a wonderful, simple recipe that guests always asks for seconds!
