About this Cook
Thanks to people like Chef John, the food network and Youtube I am a self taught cook. I love cooking for family and friends. I am never afraid to try something difficult or new in the kitchen. My wife might be afraid to eat it but I am not afraid to make it.
My favorite things to cook
I love making deserts, breads and pastry. I have found it's a little more difficult than cooking on the stove since measurements of ingredients and heat have to be precise. It's frustrating but a lot of fun.
My favorite family cooking traditions
Biscuits and Gravy or Pancakes on Sunday morning were something my dad made and loved or Pullaparts (Monkey Bread). Now that he is gone I have kept up his tradition and I make them for my family.
My cooking triumphs
Learning how has been a triumph in and of it self. I hope to one day become a professional chef. Well after Im done being a professional Soldier....War can't last forever!
My cooking tragedies
Pecan Pie kicked my a$$ for about 4 years and over 12 attempts. I could never get the center set until I found a recipe that didn't use corn syrup. Now I have my own recipe that I would put up against the Karro versions.

Grandma's Lemon Meringue Pie
Wonderful recipe! If your having a problem with watery filling here is how you fix it 1. Boil your filling for about 5-7 minutes or until VERY thick. 2. Before you bake the crust egg wash the whole thing. 3. Ensure you seal your meringue to the crust. 4. Put your meringue on when it has cooled slightly and firmed up a bit. If you do this your pie will come out beautifully every time.

New York-Style Cheesecake
GREAT Cheesecake recipe! Moist, delicious, dense this is now my go to for cheesecake.
