Cheeseburger Soup I

I was frantically searching for a similar recipe featured in one of the first editions of Taste of Home. It's my husband's favorite, and I lost the recipe! I couldn't get it quite right until this one! I also add one seeded, minced jalapeno, crumbled bacon, and some cayanne to the adult's portions. He thinks I found the original recipe, but this one's even better!!

Yummy Roll Ups

This is a great snack for kids! They love to help make it. One of my kids dosen't like ham, but they both love this. My one suggestion-I use refrigerared Claussen mini-dills instead of spears. They roll easier and give an extra crunch! The flavor blends nicely.

Caprese Salad

This is a very authentic flavor. I would suggest trying this version, in which the soft flavors blend the way they're intended. I think that when you chop, dice, and spread additional ingredients into this, it takes away from the simplicity of this salad and tries too hard to overpower the intended effect. Perfect the way it is, makes a beautiful lead into a meal. Simply remove some of the basil when serving to younger diners.

Polish Style Lasagna

My family LOVES mashed potatos, and I thought they'd flip for this. It was a no go, so I served the leftovers with fried kielbasa. This kicked it up a bit, and they liked it better. I'm going to use chive-and-onion cream cheese (or garlic) next time.

Joanie's Coney Island Hot Dog Sauce

Be very cautious in trying this recipe for children! My husband and I thought it was okay, but I wondered if I had done something wrong with the spices! (Should the measurements be teaspoons?) It was awfully hot, even after I added a small amount of sugar, some ketchup, and removed some of the spice. Kids ate plain hotdogs, and husband did not request a repeat. I was disappointed, it looked good.

Kansas City Steak Soup

I made this soup with some leftover prime rib and simmered it with some red wine. That soup was nearly gone before I got any! My picky eaters wouldn't go for the mixed veggies, but they loved this with potatoes, carrots, celery, and onions. So, we adjusted the recipe to our own tastes, and it came out FABULOUS!

One Dish Chicken Bake

This really was easy. I cut the chicken breast into chunks and sauteed it, and then stirred the whole lot together and baked it. I did leave out the water and used two cans of soup (one of cream of celery) and added more milk. Everyone ate, but no raves. Husband asked if I was in a rush to fix dinner - not the best compliment. I'll save this for "30 min. dinner nights."

Banana Split Cheesecake

This is really, really good! Kids like it, adults love it! Very versitile. To those having trouble, again...make sure your ingredients are room temp and blend thoroughly. You might try popping the crust into the freezer while you do this so the cold can help set the filling, and to avoid sogging the crust. Chill until set!

Salisbury Steak

This came out very tender and quite flavorful. It was fast, and the adults liked it, but the site of all of those onions turned the kids right off. I would make this again, but I would substitute a rehydrated package of dry onion soup mix. (In one cup water.) That way, I can add the onions to the meat mix, and leave them out of the gravy without losing flavor. Also, I would decrease the ketchup to 1/4 c. or so (too much tomato smell, kids thought it was meatloaf!) and add some beef broth or boullion.

Prime Rib

We have always roasted our prime this way, and found it to be the surest defense against dry meat! Searing in the juices ensures that the meat stays moist and holds the flavor of your marinade. Just a quick heads-up: this method also does womders for a roasting chicken or a Thanksgiving turkey!

Campfire Banana Splits

Let these cook slow and make sure they melt! Eat with a spoon for an excellent treat. We camp a lot through the summer, and this is a great change of pace, and mom's way to sneak in some extra fruit! For those reading other reviews, OF COURSE YOU DON'T EAT THE PEEL!!! scoop the filling out!

Buttermilk Fried Chicken with Gravy

There couldn't be a better fried chicken. Very down-home, the kind of thing I love to give my kids. This dish can earn you raves! Make plenty of gravy and potatoes...you'll be glad you took the time.

Pepperoni Stromboli

Very fast, tastes great! Just remember to take the dough out to thaw in the morning. We did some minor changes the second time we made...omitted the extra oregano, the ground is too strong. Maybe crushed would be okay? Added more cheese, brushed loaf with a beaten egg to help the parmesean stick and give it nice color.

Different Chicken Divan

My whole family loved this new favorite. Sometimes the young diners are the true test of a new recipe-our daughter pronounced that it "can't be a casserole, because she likes it!" Try it served over rice cooked in chicken broth rather than water.

White Cheese Sauce

This was good, but I used pepperjack cheese instead. Seemed to add some extra flavor. Was really good over chicken enchiladas. Also cut down on the butter a bit. Thanks for the recipe!

Aunt Jewel's Chicken Dressing Casserole

I used breast tenders in this (less cutting, more tender and thin to soak up flavor.) and I mixed the whole list of indredients together and baked in a glass dish. Also used plain chicken stuffing, not wild about the cornbread kind. Not the prettiest dish, but everyone ate and enjoyed, and it was the easiest dinner! Will add to the "things you CAN cook while I'm at work" folder!

Italian Sausage Soup with Tortellini

The soup flavor itself was great, but I added portabella-stuffed tortollini, and didn't like it. Next time will add plain rotini or homemade egg noodle. Flavor was so well-rounded, though! NOT a hit with young children, though.

White Bread I

This is a really great bread. I always have to make two loaves...my family eats the first one up with butter right out of the machine! Tastes like home...and NOTHING could make a better egg salad sandwich!
