Spicy Honey-Roasted Chicken

The whole family liked this! I cut up a whole chicken but otherwise followed the recipe exactly. This will be a new staple in the meal rotation!

Light Oat Bread

I love this dough for cinnamon rolls! I use the dough setting on my machine. When done, I roll out on a floured surface to make a rectangle about 12" X 18". I sprinkle with cinnamon and brown sugar and dot with butter. I roll and slice with dental floss. I bake in a pan that has brown sugar sprinkled on the bottom with a few more pats of butter. Delicious!

Honeyed Chicken

This was very good and two of my three kids loved it. The third on thought it was too spicy for him. I cubed skinless chicken breast, browned slightly in a little EVOO and then added the sauce. Left the heat on medium high and allowed the chicken to cook and the sauce to carmelize. I added a pinch of cinnamon to my sauce as other suggested. Can't wait to try this in the oven over chicken pieces with the bone in. Should be delicious!

Neat Sloppy Joes

These were good and my kids really liked them. However, I too found them way too sweet. Next time I will only add maybe 1 - 2 T of brown sugar. I also like to add mustard to my sloppy joes while they are simmering.

Caribbean Coconut Chicken

I took another reviewer's tip of adding a touch of brown sugar. It made all the difference! I cut my chicken into chunks and marinated a couple of hours in 1/2 can coconust milk. I then cooked the chicken in the coconut milk and added the rest of the coconut milk when I added the veggies. I simmered on the stovetop instead of baking in the oven. I gave this recipe 5 stars because as is - it was just right for the kids. Then when I served my bowl I added a little curry powder and the chili peppers. On my second serving I added curry powder, chili peppers and 2tsp of peanut butter. Then it tasted just like Massaman Curry! I will definately be making this again and again!

Black Bean and Couscous Salad

I have made this many times. It is very versatile. I love the dressing and sometimes use lemon instead of lime juice. I also like to use edemame beans in place of the corn. Yummy and healthy!

Apple Banana Cupcakes

Yummmm! In an attempt to use up from fruit I used two bananas and three apples. I used 1 cup of flour and 1 cup of oat bran, and only 1/2 cup white sugar. They came out great! To make quick work of the apples I halved each apple, cut out the core and shredded the halfs with the skin on. You will never notice any peel in the cupcake and it adds a bit more fiber.

Oven Fried Chicken II

Loved it! And my kids and husband loved it as well. I tried it first with thick cut pork chops and second with chicken thighs. Both were very good! Gives a nice flavor and texture of being fried without the fat. The only thing I changed was instead of pouring oil over the chicken, I sprayed with EVOO. Thanks for the recipe!

Shaped Vanilla Cookies

I love this recipe! Quick, easy, and the cookies are so soft! I have been looking for a soft chocolate chip cookie. After I made these as cut out cookies with sugar on top I used the same recipe but instead of white sugar I used brown sugar and added semi sweet chocolate chips. Yum! My new chocolate chip cookie that stays soft even when cooled!!

Very good and looks beautiful. I sprinkled the meat mixture with powdered gravy mix, added 2T of water and a generous dose of Worcestershre Sauce. A hit with the kids so it is a keeper!

Salad Dressing Cupcakes

These are sooo good. Just as fast as doing a box mix, but taste much better. I used FF Mayo in mine. They are heavy but have a fudgy yummy taste to them. Makes 12 perfect cupcakes. Tops came out nice and smooth, perfectly rounded.

World's Best Vegan Pancakes

These are really good and you can't tell they are vegan! I was out of eggs and my kids really wanted pancakes, so that is how I ran accross this recipe. I did not have self-rising flour so I used all purpose and added 2 tsp baking soda, 1 1/2 tsp baking powder, and 1 tsp salt. I used vanilla soy milk. The batter was really thick so I added another cup of soy milk. It made a really nice fluffy pancake. I could have probably added another cup of soy milk to thin it out a bit. I never would have thought of using my custard mix for this but it is really good. thanks for the 'eggless' pancake. You made my kids happy!

Oatmeal Dinner Rolls

Awesome rolls! As per another poster, I used milk in place of the water. I brought it to a boil in the microwave and then added it to the oatmeal and butter over the stove top. I doubled the recipe and had no problems. Very fast, very simple, very good...what more could you ask for! They were devoured at out Thanksgiving dinner.

Pilgrim Pumpkin Pie

Oh My! This pie is good. Fern is right! I don't know what makes it so different, but it really is smooth and good! The crust is by far the easiest and yummiest recipe I have found. I will now use it for all my pies and will always make this pumpkin pie for the holidays. I did add some nutmeg, other than that followed recipe exactly.

Oatmeal Peanut Butter Cookies III

Yummy! I didn't even bother with the filling. Because of a family allergy to peanuts I used Trader Joes Soybean Butter and they still came out fabulous! Also added about 3/4 cup of carob chips. Will be on the favorite cookie list!

Grilled Baked Potatoes

I took the last reviewers advice and used red potatoes. I cut each one in half and followed the remaining directions. Yum! These have that great fried potatoes crisp on the outside without a lot of fat. I will be making these again. Fast and easy yet worthy enough to serve to company!
