Gluten-Free Chocolate Cake with Semi-Sweet Chocolate Icing

My daughter can't eat gluten so I make a lot of gluten free items. I made these for a going away party for someone at work who is also gluten free. They are Awesome! Everyone ate them and loved them. Lucky for my daughter she was also home at the same time and gave them rave reviews.

Chicken Long Rice Soup

I made this for an Hawiian themed party for senior citizens. Everyone loved it an there was none left (I doubled the recipee). I made a couple of changes. I used half the salt. I don't have access to Maui onions so I used vidalla. For the chicken, I used about 4 lbs of boneless skinless chicken thigh. This was a double batch and not having to mess with skin an bones was great. I have sinced made it for my family and still use the boneless skinless thighs. It also cuts down on the fat.

Fluffy Biscuits

Awesome! I took the suggestion of using 1/2 butter (1/4 cup) and 1/2 Shortening (1/4 cup). I also kneaded the dough 20 times. I didn't roll it I just patted it to 1 inch thickness. The biscuits were tall and were wonderfully fluffy. Definately my go to recipe for muffins.

Mama Corleone's Sausage and Peppers

This is a new favorite in our house. I use chicken sausage and double the amount. I also double the spices and the garlic. when the peppers are done I put the sausge back in and add about 1/2 cup of red wine and simmer it for a couple of minutes. I then mix with penne.
