Fried Cabbage II

This is pretty much how I remember my grandmother making her fried cabbage. The cabbage came from her garden, and she would use a half a pound of real thick sliced bacon because she was feeding a lot of people usually. She would cut the bacon into "lardons", and when it was cooked crisp, take it out and put it aside and then cook the cabbage, salt, pepper and only a teaspoon of sugar until the cabbage was carmelized in areas and soft and fragrant. She would put it all in a serving bowl, add the bacon back in, mix it with a serving spoon, and put the vinegar cruet right next to it on the table. Amazing! She has been gone many years, but every time I see this recipe I think of her.

Awesome and Easy Creamy Corn Casserole

Well, I am a big corn lover anyway, but since we had an abundance of corn from the garden this summer, I roasted 4 ears of corn in the oven, then cut the kernels off of those, and measured out the corn and I would need for the recipe. I did everything else the same, salt and pepper to taste, of course, but added finely chopped scallions sprinkled over the top halfway through baking time. I almost wanted to eat half of it by myself, but restrained, and shared with the family.Haha. They loved it! Thank you for a great recipe

Gourmet Pretzel Rods

You can do so much with these! I made them 2 Christmases ago, and I remember rolling them in the chocolate, and then we sprinkled all kind of little candy things on them, and nuts. At the family party, the ones that went fast were the ones that had crushed up plain Lays potato chips on them! we were eating chips while making these, and horsing around, so someone came up with the idea. Have made them again since, and ...yep! They are darn good! Get inventive!

Shortbread Crust

This is a great recipe as-written just for the texture of it, and the richness. But I wanted to add more flavor, so I put in 2 Tablespoons of lemon zest, and 1 tsp. of almond extract. I patted it into a 9x13 baking dish, followed the baking instructions, and when it was cool, I cut it into bars about 3.1/4 inches long and a little over an inch wide. I then dipped 1 end into a semisweet chocolate ganache, and sprinkled finely crushed macadamias on the chocolate end. Wow...my family loved it! You can tweak this recipe with different flavors of add-ins and coatings, but you still have that great shortbread to start with. Thanks!

Seasoned Crackers

my grandkids are all about ranch dip or dressing...they would put it on breakfast cereal if we let them. LOL. This is a great after-school snack, but I cut the oil to 1/2 cup, and no garlic. That's it!

Delicious Ham and Potato Soup

Ok...I tweaked it. Had some leftover baked ham, and I decided to coax a little more flavor out of the veggies, so I did all the prep work, poured a little EVOO on them and roasted them in the oven. Added baby carrots cut in half. Then I added the cooked vegetables to the water and continued the recipe from there. Didn't add extra salt, and I put a bay leaf in the mix, removed later before serving. Also, I used evaporated milk...just makes it smoother. My mom used to make "rivvles" (sp?...little dumplings) I need to get that recipe from my aunt so I can add those, too at a future date. I loved them as a kid. This is a wonderful base recipe to create your own!

Bacon Ranch Pasta Salad

I used cavatappi pasta instead of rotini, and cooked it al dente. Half mayo, half sour cream, added finely sliced green onion, (about 4 average, including some of the dark green part) and used real bacon bits. I also added 1 cup slightly chopped fresh broccoli just because the grandkids love it. Perfect! There wasn't any left over, but I imagine if it was dry the next day, a little milk would do the trick. My family really enjoyed it, and the hardest part was just some of the chopping. I wouldn't mind trying to tweak it a little more sometime....hard boiled egg? grapes? pimento? We'll see...LOL

Slow Cooker Carnitas

I have tried this recipe, but then decided to kick it up. I cut the roast into workable chunks, and I did everything the same except I added half a can of chipotles with adobo to the rub, then smeared it all over the meat and let it stand for about 4 hrs. I put the meat in the crockpot, then cut a large orange in half and squeezed the juice over the meat, and dropped the halves into the pot. Cooked on low for 8 hrs...amazing! I only gave 4 stars since I tweaked it. We made pork carnitas tacos with this.

Gyoza Sauce

I'm only giving 4 stars because I added 1 T. of brown sugar, decreased the vinegar to 1/3 cup, and used 1 tsp sambal chili paste instead of flakes. I heated it in the microwave a little just to dissolve the sugar...really good stuff! Thought about adding more paste, but kids were eating this, so....

Classy Green Bean Casserole

I use the canned green beans, too. For me, the fresh or frozen ones don't absorb the flavors of everything else, and the dish also ends up watery. I only used half of the sour cream....best dish ever! Remembering this from my childhood, and my mom and grandma made it with canned green beans.

Kid's Favorite Pea Soup

well, I subbed a diced ham steak for the bacon, and used sodium free stock since I was making this for someone on a VERY low sodium diet. The flavors were actually much clearer w/o the salt, but I added a little to my serving. Really good ingredient portions!

Scrambled Potatoes

We did the recipe as is (for the kids) for a Sunday brunch, but had add-ons for the adults. Sauteed mushrooms, jalapenos, chopped scallions, and pico de gallo. We all liked it!

Tomato, Cucumber and Red Onion Salad with Mint

I didn't have red wine vinegar, so I subbed it with rice wine vinegar and used half the sugar and half of the amount of red onion...I could tell it was it was a very strong flavor just chopping it. The mint is refreshing...we liked this a lot!

French Onion Dip

This is so easy, and my mom made it for years, but I think it is better with sour cream and if you sift out all the thingys and add some chives. Another reviewer said they like it added to cottage cheese...there is a restaurant here in Denver that is semi-famou for their cottage cheese, and I am positive that they put onion soup mix in it!

Oregon Salmon Patties

Started out to be too much liquid, so I had remembered a recipe that used a russet potato microwaved, peeled and chopped in as binder. I also added about 1/8 tsp of cayenne for some zip. Success! They were soooo good!

Sloppy Joe Bake

I used to make this YEARS ago, when my kids were school age, (the 80's) and they loved it! When I made it recently, I put it on a cookie sheet, and used only 1 can of sloppy joe mix. (live by myself) It turned out really nice, and I shared with a bachelor neighbor who is a BAD cook (LOL) and he really liked it! Thanks for the memory!

this is really good! I cut it in half since I live alone...but now wish I had made a full recipe! My only change was cutting the oil in half, and I used about 1/4 cup of sour cream.
