Vegetarian Cottage Cheese Patties

Pleasantly surprised! I LOVED these patties! My boyfriend liked them a lot too! They reminded me of a really delicious stuffing I made once. I didn't want to stop eating them! Next time I'll make a little more of the mushroom soup! Soo good!

Stuffed Peppers My Way

Pita Pizza

Hah! What an awesomely quick and slightly healthier way to have pizza! Don't have a grill so made them in the oven. 350 degrees for about 15 minutes does the trick. Made some with zucchini and some with mushrooms and both turned out yummy. You could add just about any topping you like to these. Ill keep this recipe in mind for a quick lunch and or snack! Thanks for sharing!

Chile Rice Casserole

I really wanted to like this recipe more than I did. It was so easy to make that it would have been a nice go-to meal. Unfortunately, it was very bland. I tried a few different spices and cumin seemed to help give it what it needed but it still fell short on flavor. If I made this agian I would definitely add a second can of green chile peppers, cumin and a secret ingredient that would make all the flavors pop.

Potato and Vegetable Frittata

I loved this recipe! I used eggbeaters and it was still great! Used a red instead of green pepper and no olives. Yum yum yum! I ate some for left overs the next day and it was just as good as the first time. The flavor was spectacular! Ill make this again when I have guests over!

Roasted Asparagus with Balsamic Vinegar

Added a bit of lemon juice as suggested by previous reviews. I made a mistake and combined all the ingredients together. I didn't want to waste it so I threw it on the asparagus and crossed my fingers. Turned out just fine. I also did the same to zucchini and it gave a great flavor.

Jeanie's Falafel

YUM! The spice combination is the perfect flavor! I love it when I can throw all my ingredients into a food processor and be half way done! Went a healthier route and baked the falafel instead. Took 25 minutes at 350 (turning every 10) for a crispy brown outside. Stuffed the falafel in a pita with lettuce and tomato with a light champagne dressing and now my boyfriend thinks I'm a genius! Thank you so much for sharing! These are delicious!

Broiled Tilapia Parmesan

Who knew making Tilapia could be easy and delicious! Had guests over for dinner last night and they loved it! Since there was only 4 of us I used 4 fillets (no idea how much they weighed) and same amount for everything else and it turned out just great! Ill will make this again for sure.

Apple Avocado Salad with Tangerine Dressing

The tangerine dressing was a refreshing change from the normal vinegar/lemon/oil combos I come across. As with all salads that ask for fresh red onion it had a "bit" here and there but Ill definitely make it again! I'm not a huge fan of blue cheese and so I used feta and thought it tasted great.

Kumquat Salad

A great twist on a salad. Be sure to slice the kumquats small otherwise you might get a big surprise in a few of your bites. Didn't have celery and didn't miss it. Used feta not asiago and it was still great! Thanks for sharing!

Sweet Potato Casserole II

This is a great recipe! I used sweet potatoes and yams for the 4 1/2 cups. The taste was great and it wasn't too sweet. I did make a double batch for the topping and used the evaporated milk instead. I highly recommend this for thanksgiving or any large meal you plan on making! Delicious!

Garlic Crab Legs

Awesome! First attempt at crab legs was a total success thanks to this recipe. I read many of the reviews and made adjustments. I cooked the corn separate but, it was more of a space issue and it worked out well that way. I also added more Old Bay Seasoning as others had suggested. The legs and corn turned out soooo good. I separated some of the sauce before I sauted the corn and legs and saved it for dipping which everyone loved! Thank you for sharing Robyn!
