Salsafied Chicken and Rice

I used this recipe as a jumping off point. I cubed 1.5lbs of boneless/skinless chicken breasts and cooked them in olive oil with a packet of Taco Bell taco seasoning. Added some chicken broth (not sure how much), 2 packets of Taco Bell salsa from a taco kit (all I had), 1 can of well rinsed black beans, 1 can of rinsed corn niblets, and about 1.5C uncooked brown rice. I then just let everything simmer for over an hour. After it was all cooked, I decided it needed more tomatoes, so I added 1 can of diced tomatoes. In the future, if I'm short on salsa I'll be sure to add the tomatoes earlier so they absorb the taco flavor better. I completely forgot to add cheese, but it was still *delicious*! I'm sure a little cheese, as well as some sour cream would enhance this further. Anyway, needless to say, this is a definite keeper. As a base that you can modify, I think it's great. As a complete recipe, I imagine it'd be awfully bland. Regardless, thanks for a great idea! :)

Jay's Signature Pizza Crust

This was my first time making homemade pizza and it turned out great. My only real complaint is that the crust didn't brown, but the taste and texture were spot-on. I used my bread machine (only my 2nd time using it) to mix the dough and let it rise for an hour. I used the dough to make one 13" hand tossed style cheese pizza. Baked @ 500 degrees on my pizza stone for about 12 minutes. This was so easy and tasted so good that I will definitely be making it again and again! No more take-out pizza for us :)

Bacon Ranch Pasta Salad

Great recipe and very easy to change to your liking. I used whole wheat pasta, a 28oz can of diced tomatoes drained (I didn't have any fresh tomatoes), 2 cans of black olives drained, 1 can sweet peas, 2 cubed chicken breasts, 1 lb bacon, 1 cup of light mayo and almost a whole (small) tub of sour cream, lots of shredded cheddar, 2 packets Hidden Valley Ranch mix, lots of garlic powder, some pepper, some salt, a pinch of dill weed and a pinch of ground red pepper. Unlike some reviewers, I didn't think it was too salty. As a matter of fact, I thought it needed more salt, so I added some. I don't measure my spices - just add and taste. Next time I want to try it with grape tomatoes, but otherwise I think I'll do it just the same way I did this time. Definitely a keeper :)

Brooklyn Girl's Penne Arrabiata

This was absolutely delicious! I did make a few changes, based on what I had on hand. I used boneless, skinless chicken breasts, between 1.5 & 2 lbs, diced into large bite-sized pieces. I didn't bread the chicken, just pan fried it with the garlic powder, salt and pepper. Also, I was out of tomato sauce, so I made my own using a can of tomato paste mixed with equal parts water, and used 1/2 cup of that. Next time I may use a little more tomato sauce. Finally, I didn't have any red pepper flakes, so I used 1/2 tsp of ground red pepper. All in all, it was absolutely wonderful. Definitely a keeper!!!
