Zucchini-Chocolate Chip Muffins

Made exactly as written. Very tasty. A bit oily on the bottom, but it won't stop me from making them again. My finicky seven year old enjoyed them, too.

Maple Icing

Reviewed: Jul. 14, 2014
Really good recipe. I used 3 1/4 cups of confectioners sugar only because of personal preference. I enjoy tasting the tangy flavor of the cream cheese. I used it to frost brownie cookies.

Following the directions exactly, it worked perfectly. You MUST sift the flour.

Proper English Cottage Pie

Reviewed: Feb. 22, 2014
Tasty pie! My 9 inch pie pan was a little small, so there was a bit of over flow. Luckily, a cookie sheet caught most of the mess. I cut in half the amount of butter, and it still tasted great.

Turkey and Quinoa Meatloaf

Reviewed: Feb. 18, 2014
Really tasty. Had a hard time forming the loaf. It wouldn't stay together when I shaped it. Added 1 extra egg and approximately 1 1/2 cups of Italian breadcrumbs. It came out of the oven, perfectly moist and didn't fall apart when it was cut. I'll try again without the breadcrumbs next time since it gets placed in foil.

Cream of Mushroom Soup I

Reviewed: Jan. 3, 2014
Really good simple recipe that I have made several times. I've made it exactly as directed, but have also substituted skim milk or whipping cream for the half and half. I've even omitted the sherry or substituted white wine. It still turns out great. I no longer buy canned mushroom soup. Thank you for sharing!

Sirloin Steak with Garlic Butter

Reviewed: Jan. 3, 2014
Made exactly as directed, but added a pinch of salt since I used unsalted butter. Strong garlic flavor, but I really like garlic. Will make this again!

Roasted Garlic Lemon Broccoli

Husband of 12 years who will eat anything, took 1 bite and said no. Too salty and dry. It needs more olive oil.

Quinoa Black Bean Burgers

Reviewed: Jul. 1, 2013
Great. Better than a store bought frozen veggie burger. I love spicy food, so from reading the reviews, I added 1/2 tsp cumin, 1/2 tsp paprika, 1/2 tsp black pepper and 1/4 tsp cayenne pepper. Will be making again soon!

Tasty Buns

Delicious! Substituted 2 tbsps of melted butter for the vegetable oil. Made the dough in a stand mixer, but mixed for 7 minutes on medium speed. No more store bought buns for us. Thanks Charlene!

Chicken and Lentils

Reviewed: Jun. 5, 2013
Really good recipe. Made it almost exactly but used boneless and skinless chicken breasts, 1 tsp. of fresh rosemary and forgot to add the lemon juice. Husband proclaimed it "a keeper." This one is going into rotation. Thank you for sharing it.

Rigatoni

Reviewed: Feb. 13, 2013
I think there's an error in the recipe. The ingredient list calls for green onions yet shallots are mentioned in the directions. I omitted the shallots and green onions because I didn't have either. It is a good starting place, but the recipe needs some more seasonings and is a bit dry. Next time, I'll try it with green onions, salt, additional basil, more tomato juice, and 1/2 a cup of parmesan cheese mixed into the tomato juice to create a sauce. Otherwise, I was excited that it was meat free and had beans.

Lentil Soup with Lemon

Wonderful! I added 1 teaspoon each of black pepper and chili powder instead of the lesser stated amount. Instead of lemon juice, I used a tablespoon of sour cream. All else remained the same. This keeper recipe is going into rotation!

Quick Alfredo Sauce

Reviewed: Jan. 30, 2013
Really easy to make. Unfortunately, I didn't have any half and half, so I made my own using 2 tablespoons of melted, cooled butter mixed into 2 cups of skim milk. Added a sprinkle of garlic powder, black pepper and a quarter teaspoon of nutmeg into the sauce. Great! Thanks for a good recipe.

Cheesy Pasta Alfredo with Salmon

Reviewed: Jan. 30, 2013
Tasty! It's good grub comfort food. Used bow tie pasta and made my own alfredo sauce. The lemon was a little strong from baking the fish, but I think with more cheese, it would balance it.

Vegetarian Chickpea Curry with Turnips

Reviewed: Jan. 26, 2013
Wonderful! Doubled the recipe since we like leftovers. Mostly made as directed, but decreased corn to one cup and added an extra turnip. Lots of flavor, spice and heat! Going into rotation. I think this would be wonderful with the addition of chicken. Thank you for the delicious recipe.

Spicy Sweet Potatoes

Reviewed: Nov. 29, 2012
Good starting point, but it tasted a little bland to me. More Cajun seasoning is needed. I used 1 tsp. Tony Chachere's creole seasoning, but added a few shakes of garlic powder, cayenne pepper and black pepper. I baked it on a cookie sheet for 30 minutes at 375 degrees using the convection oven setting.
