Last summer, my husband and I planted way too many tomato plants and I had to find things to do with all of them (I would rather freeze than can)- I skinned some tomatoes (a minute in boiling water to remove skins), cut them up, then used this recipe subbing 28 oz fresh tomatoes for the canned tomatoes. I chopped up the veggies and combined every ingredient (using beef base instead of cubes), EXCEPT beans and meat (and obviously the chips and cheese), in a large mixing bowl. I split the veggie mix in 3 freezer bags and froze them. When I was ready to try it out, it went from the freezer to the crock pot with 1 lb of cooked ground meat (think we just used beef) and 1 can (or more) of beans for 1 bag of veggie mix. I let it cook on low 6-8 hours, stirring occasionally. Yummy! I made another batch and gave the frozen bags with directions to my family and they all agreed that it was incredible! Awesome recipe. Now, the tomatoes are here again, so I came back to grab the recipe and do it again...mmmmmm
