Delicious Black Bean Burritos
My whole family loves this and begs me to make it when we go camping. I added a few things. I added, 1 teaspoon cumin, ½ teaspoon chili powder (instead of the jalapeno), 2 10oz cans Rotel diced tomatoes lime and cilantro (make sure you drain them really well). I thought the recipe needed tomatoes and some more Mexican flavor. Its really good with whole grain tortillas.

Bean Quesadillas
I like it, but I had to make some changes. I added cilantro, cumin, chili powder, and lime juice. I don't know why people have a hard time flipping these over. I just put some cheese down first then the veggies and more cheese. When the cheese melts at the bottom the veggies stick to it. Hardly anything comes out. I also put the tomatoes on a paper towel to get rid of the juice. It reminds me of the black bean burritos I make.

Italian Sausage Tortellini Soup
I just made this for dinner tonight for the first time. I normally stick to the recipe but when tasting the soup when making it I was worried it could use more than just a half a cup of pasta sauce. I used a 1lb 10oz can of hunts pasta sauce and it was thicker and hearty along with the beef stock. I also added the spinage which was a nice touch too. I am always worried when trying a new recipe, but this was very good and I will make it again.
