Brussels Sprouts with Mushrooms

I've tried frozen and fresh... Definitely go with fresh if you can!! Makes a big difference. I hate soggy veggies. Being diabetic and always looking for something healthy AND yummy, this has become a staple in my diet. However, I Highly recommend cutting them in half after steaming or boiling them then cooking them on high heat flat side down in the butter. That would make it five! Personally, I like it with garlic salt and omitting the lemon juice. Delicious.

Tender Italian Baked Chicken

This is SO Good. It's practically fail safe. My dad makes his chicken this way most of the time. Although if he is out of parmesan cheese, he will use Italian dressing in its place, and it works just as well, tastes just as good. Also if the pieces of chicken are huge, you may just want to pan fry enough to sear it first, and then pop it in the oven.

Pumpkin Fluff Dip

SO yummy! I could just eat the whole thing on my own lol Sometimes I'll just get lazy and buy Libby's easy pumpkin mix, the one that already has the spices in it, just as good imo. Last time I made this I baked a pumpkin pie and when it was done cooling, topped it off with the Pumpkin Fluff Dip. Yum. Give it a try!

Albondigas Soup I

I Love this soup so much, and its so easy to change it how you like it. As is, its wonderful, but I do like to add other things to it to make it more like my grandmothers. I always use a can of chile verde salsa, and using Cumin is a Must. I like mine with chopped up stalk of celery, squash, cabbage, and a bundle of cilantro. (Cabbage and cilantro should be added in last, after the meatballs). I'm diabetic so I usually omit breadcrumbs, rice, and milk with no problems too. **By the way... If you take out the Rice it reduces the cooking time by at least an hour.

Pan-Fried Chinese Pancakes

Awesome Sausage, Apple and Cranberry Stuffing

Russian Tea Cakes I

I love these cookies! I am diabetic though so to make these manageable, I roll the dough into size of chickpeas and use chopsticks to roll them in the powdered sugar, and decrease the bake time. They look lovely that small too =)

Sausage Stuffed Jalapenos

This is such an awesome recipe. I like to add roasted garlic to the filling and if I have it on hand, substitute the Parmesan for shredded cheddar and jack cheese Try these wrapped in puff pastry!!! Line them up on a baking sheet lined with foil and bake them for 11-12 minutes until nice and golden brown :D It's a delicious little filler and it tastes so good.

Foil-Baked Chicken

As far as I'm concerned, there is no substitution for Hoisin sauce, you either have it or you don't. It is usually made with soybean paste, sesame oil, garlic, vinegar, molasses, and sometimes chilli and other spices. It's a tad sweet and salty. Easy to find in an asian market or grocery store (for A LOT cheaper, too). Not sure who tried to sub peanut butter, but ya... lol Definitely cannot fault the recipe on that one. Goes very very well with chopped green onion. I had this with sauteed shiitake mushrooms over rice. Added cayenne pepper for heat. I left the cornstarch out entirely and did not miss it. The hoisin sauce I had on hand was really thick as it was, and with the other ingredients it just made more sense to leave it out. It was thick enough when it sat for a bit anyways. Yum

Rainbow Clown Cake

Made two cake pans, one with the red, orange, yellow, and the other with green, blue, purple. Used cream cheese frosting between the layers and over. Looked Beautiful with silver candy beads. Served it for a Gay Pride After Party. It was PERFECT. Everyone absolutely Loved it. Thanks you!

Frozen Chocolate Graham 'Ice Cream' Sandwiches

This is SO easy, and SO easy to modify! I love adding a bit of pistachio instant pudding (just a preference). You can dip the graham crackers in chocolate and coat one side with chopped nuts for a nice fancy treat, and/or drizzle with chocolate. I've tried this same variation with the addition of vanilla instant pudding and Libby's Easy pumpkin pie mix with cinnamon grahams, or honey grahams with drizzled white chocolate over the top. You can spike it up as much as you want. Absolutely delicious, thank you for posting!

Bolognese Stuffed Bell Peppers

This is so delicious as is, but its also easy leave out ingredients to cut back on prep time without sacrificing taste. When I feel lazy, I often substitute the parmesan cheese, whipping cream, and marinara sauce for Classico's Vodka Sauce and dont bother with the celery or carrots. If I do these things it cuts the prep time and the rice is usually done by the time Im cooking everything else. I top with parmesan cheese. Great recipe, thanks!

Cheesecake Brownies

Delicious!!! Used a package of Ghiradelli Dark Chocolate Brownies (I refuse to use any other brownie mix), and sprinkled some ghiradelli semi sweet chocolate chips over the cream cheese mixture after swirling a bit. I did add two tbs of flour to the cream cheese mix for better texture. Doubled the batch and it was still gone in two days. Thank you!

Peanut Butter and Banana Smoothie

I usually double this and use regular milk, but I like adding ice to chill it out. If you chop up the bananas and freeze them, it really helps with the thickness of the smoothy. I usually try to cut back on the sugar by adding two spendas in place of the honey for my double batch.

Fettuccini Carbonara

So simple, so good. My bf wanted me to use angel hair (which I HATE)... and I definitely think sauce would be better on other kinds of pasta - but the point is that sauce was really good. I was worried that using milk instead of cream would affect the sauce since I didnt have any, so I added an extra egg and reduced the milk amount instead. Realized after wards that I wasn't supposed to use whole eggs, so the recipe is forgiving =) Thanks a lot, made a great dinner.

Awesome Slow Cooker Pot Roast

YUM. You Cannot go wrong with this recipe, sorry but if you say this was "tasteless and rubbery" you must've really screwed up! I used a 6 lb pork butt and slow cooked it for 9 hours. Threw in some big carrot chunks, one chopped onion, one can of stewed tomatoes with the juice (preference), and cut back on the water. I generously seasoned my roast then seared it. We like a lot of pepper and oregano, so added in. The bone came right out at about 7 hours. Splendid. Its got a lot of liquid in it but its got tons of flavor. Took the juice out with a ladle and made a delicious gravy. Fiance said it was the Best Pot Roast he'd ever had! Thank you!

Curried Salmon Bake

Curry paste is not the same as curry powder. Curry paste is.. well.. a paste. Personally I think paste is ten times better than powder. I have used brown and yellow, but I think green would be just as good. Depending on the kind of paste you get, one tablet is good, or even one tablespoon. Depending on the brand of the paste, you may have some trouble mixing it into the sour cream. I heated up my paste a bit of oil with some garlic. Added a bit of cayenne for a good kick and topped off with some cilantro and steamed peas. Yum.

Mushrooms with a Soy Sauce Glaze

I cook mushrooms like this ALL the time. Try it with green onions and evaporated milk and some mayo and it makes a delicious sauce to put over rice or pasta.

Yogurt Samosas

I dont use phyllo dough, i make my own dough with flour, salt, ghee, and water and some spices. Besides that, these came out great! Some rater couldnt figure out what to do with the yogurt and flour? Read the directions? No seriously, read the directions. lol Not the recipe's fault you couldn't take the time to read. They're even numbered for you.
