To Die For Blueberry Muffins
Never made muffins before, made them for fiance's mother and family for Mother's Day. HUGE hit! Ironically (no lie) mom and aunt both said the blueberry muffins were "To die for", LOL
Super easy. Ditched the crumb topping for sugar crystals, because quite frankly I didn't want more work when I was making four batches. Folded in the liquids until the batter was just incorporated. One thing though, made in normal size cupcake tins, one batch does not fill 12 cupcake tins, only 9 full ones for me- forgot to cut back on the time on the first batch which came out at 20 minutes slightly overdone, edible, but overdone. Cut back the time to 15-16 minutes for the rest, came out perfectly moist. So make sure you check your muffins!
Layered them in a pretty box when they cooled off. Everyone loved them. Thanks for a great easy recipe!
