Coffee Chocolate Chip Cookies

Great recipe, I substituted chocolate raspberry coffee but added 1/4 cup instead of the recipe requirements. I also used butterscotch chips and it turned out great! I made sure to keep the dough in the fridge for an hour before or half hour in freezer. The cookies may not seem done after about 8-9 minutes but if you give them time to sit they are perfect. I put mine in the freezer right out of the over to help the process. I have never made cookies with coffee but this was a great idea and it has become a new trademark ingredient that I will be sure to add to cookies in the future! Thanks for the recipe!!

No Cook Icing

Wow, I had an extremely hard time with this recipe, I followed another reviewer that also didn't have cream of tartar and used salt....big mistake my husband and I were whipping this by hand for over 2 hours, I was determined to make it work. I admit I didn't have the proper ingredients but I am unsure how this recipe worked for others without all the ingredients as well. I did substitute, finally lemon juice and it worked great, had a hint of lemon flavor but nice! The cream of tartar is actually very important because it supports the egg whites, which I did not know. So, hopefully you won't make the same mistake I made and use salt and hours of time! I recommend a hand mixer or stand mixer unless you want a true workout! The icing is very light and fluffy but doesn't hold well in room temp. I put mine in the freezer to keep from running off the cookies. I will attempt again with the full ingredients!

Peanut Butter Cup Cookies

Good recipe, I followed another review and made them without the cupcake pan because I couldn't find mine. They did come out cracked on the sides but I didn't mind because I covered them in a very light fluffy icing that went great with them. They also are like mini ice cream sandwiches if you put them in the freezer with the icing on top. YUMM!! Putting the dough and PB cups in the freezer/fridge helped tons with the process!! These are a keeper!
