Mediterranean Chickpea Salad II

Great salad to toss together, though I recommend doing it at least 8 hours before so all the flavors can blend. I used a whole slicing tomato and whole bell pepper, and cilantro instead of the parsley. I also added a tablespoon red wine vineager, added oregeno and cumin for flavor, as well as a salt, pepper, and garlic salt to taste. Next time I think I'll use a red onion, but it was good with a regular Vidalia!

Ginger Pork

Next time I'm tripling the sauce! Even with doubling it, there wasn't a lot left over for the jasmine rice. I did add broccoli when I put the meat back in the pan, and cooked it almost twice as long for the meat to get real tender (I had to used a pork tenderloin I had in the freezer). Next time I'll add water chestnuts and maybe sugar snap peas...

Lime Garlic Chicken

I loved this chicken, though next time I'll probably leave off the breading. I did zest the lime and added it to the butter to give extra flavor. I only used 2-8 garlic cloves and that was plenty. One thing I did that helped keep it from drying out the 2nd time I made it was after the chicken was browned on one side, I flipped it, turned down the heat, then added the lime juice. I sprinkled with fresh chopped cilantro and put a lid on it for an extra 10 minutes and it had so much flavor!

Bev's Mac and Cheese

My family loves it! It is more like a gourmet mac n' cheese. I do make it on the stove, though, and not the microwave and feel like it tastes better. I also use sharp cheddar and add garlic salt and a dash of mustard with it.

Green Chili Casserole

My family loved this, but I did change a few things. First, I used regular crushed tortilla chips, doubled the green chilies, and used a cheddar/jack cheese mix instead of the processed American cheese. It was great and a huge family hit!
