Potato soup is my husband's favorite. I have been looking for a good recipe for ten years... no kidding. This is definitely the best recipe I have found so far. I made a few minor changes: I sauteed the onion/garlic in olive oil; I omitted the salt; and I halved the hot sauce. Even at that, a 1/4 t was plenty. We don't like things too spicy.
The biggest change I made was using raw - not baked - potatoes. I just missed that in the directions - ha! I peeled them and cubed them very small for my munchkins. I simmered them on the stove for 20 minutes with the broth (not the half & half) and they were plenty done. I probably didn't need to cook them so long. Last, I added the half & half and cooked for maybe 5 minutes.
I also found this recipe was great for my extremely picky toddlers. I served it with oyster crackers and cubed (not shredded) cheddar cheese. They had fun throwing the crackers and cheese into the soup. It would be great for a color-themed dinner (white or yellow) or a shape dinner (CUBES!).
