Peach Cobbler VI

This was a very good, fast, easy recipe. I didn't have enough white sugar so I used 3/4 cup brown and 1/4 white. I also used fresh peaches. I used enough peaches to completely make the batter underneath disappear. I let them stay moist with water from washing them off (after peeling them) because I didn't have any canned peach syrup that the original recipe would have included. It was so easy to make and really tasted great. I served it with organic vanilla ice cream and heard lots of "yummms" as my family ate their cobblers. The only change I would make is to add a crumb top for a little bit of crunch, which I think would improve the mouth-feel. Thank you for sharing!

Sausage Casserole

My husband found this recipe and thought he would try it for a breakfast he was making for 20 of his co-workers. If I could give more than 5 stars I would! It was a BIG hit with his co-workers and lucky for me there were two pieces leftover that he brought home so I could try it. In a million years, you would never guess this recipe has cottage cheese in it! Instead of chub sausage, we used Jimmy Dean's original links, which hubby cooked up and sliced into smaller round slices. We also used another poster's suggestion of using frozen hash browns mixed with the onions and butter and cooked separately in the pans for 30 minutes before adding the remainder of the ingredients. We also upped the eggs to 8 jumbos per pan. For 20 hungry men, we used 3- 9x13 pans and assembled each pan separately, rather than combining all ingredients X3. People came back for seconds and complimented my husband profusely on what a delicious and satisfying breakfast this was. Looking forward to making this again soon for our own family! Luscious! Lemon Bread

I made this last night and served it as dessert with vanilla ice cream. It was very lemony and luscious, just what I was looking for! It was a big hit and I am planning on making it again this week. I did add a little extra lemon peel and lemon juice to the batter. Next time, I will double the icing and wait a minute before pouring it on so it makes a slightly thicker coating. So easy to make and a delicious treat. Thanks for sharing!

Garlic Cheddar Chicken

My whole family loved this. It was fun and easy to prepare, smelled fabulous the whole time it was baking, and the poster was right--no leftovers! I used extra sharp cheddar and an extra two cloves of garlic. I actually forgot to pound the chicken thin, but just added extra cooking time and it still turned out perfect. Thanks so much for sharing this. Another keeper from allrecipes.com, my favorite website!

Mrs. Sigg's Fresh Pumpkin Pie

I liked it! I made a homemade pie crust and used the automatic calculator to figure out the additional amounts of ingredients I would need for my larger-than-normal deep dish pie plate. I used calculations for 12 servings and it filled my pie plate perfectly! Based on the reviews, I was afraid the pie might lack a little flavor so I used dark brown sugar and a little more pumpkin pie spice. I actually have never purchased pumpkin pie spice before this, and do prefer to use separate spices. I didn't know how to substitute the correct amounts so I went with the pumpkin pie spice. This is the only change I would make as I feel the individual spices give pumpkin pie a more defined and intricate taste. The pie had a nice creamy texture and held together well. I felt this pie, which I prepared the night before Thanksgiving, actually tasted best the day AFTER Thanksgiving. Next time, I will make it two days ahead of when I am going to serve it. Everyone enjoyed it and I had fun making it. Using fresh pumpkin just felt healthier and more "homemade" and I was proud of my pie!

Zucchini Soup I

This soup has quickly become a family favorite. It disappears very quickly around here, even though I make a double recipe. It is delicate yet hearty. I use whole potatoes, not flakes. I also use two small hot peppers from my garden for a little extra zing. I made the soup tonight and couldn't figure out what was missing, though everyone still enjoyed it. I looked at the reviews and realized I forgot the soy sauce! I use organic tamari sauce which is fermented soy sauce. I just added it and gave it a taste. It is now perfectly delicious! Won't make that mistake again as I now consider this an essential ingredient. This recipe is a keeper!
