Hot Tamale Pie

this is a great place to start! i used less ground beef, added a drained can of black beans, and used rotel instead of salsa and in place of the peppers i just used 1 green pepper. i pretty much doubled the cheese in both places. it was FANTASTIC. i'm going to divide it up and freeze it in single sized portions so i can enjoy this for a while! next time i'm going to use lentils instead of ground beef for a meat free meal. to penny pinch you could leave the bottom layer of cornbread out and just make the top portion and it'd be just as good, but i like the extra layer in there.

Buttermilk Pancakes II

these just turned out okay. not sure what went wrong since my first batch of pancakes, the batter was nice and thick, but then all of a sudden it got VERY runny! pretty much unuseable! so i added more flour to thicken it up some. i just wasn't impressed by this recipe, though it did make a ton of pancakes. maybe they'll taste better reheated... :-(

Homemade Maple Syrup

Chicken Potpie

i used turkey instead of chicken, and used a bag of frozen mixed veggies instead of chopping my own. used evaporated milk and half and half instead of milk for the roux, and added a little celery seed. this was very good, and like another reviewer said, you'll definitely need a big stock pot to mix everything, not a frying pan.

Potato Dumplings with Bacon and Onions

these were really tastey, but really hard to get the dough to the right consistency. like other reviews, i added salt. probably about a tablespoon and it could have used more. i used two really large potatoes (probably a lb a piece). honestly, i probably won't be making this again bc it was so time consuming.

Grandmother's Bread Pudding

this was the BEST bread pudding ever! i'm not a bread pudding person, but i will definitely be making this over and over again! i doubled it, using a large french bread loaf, and used 1.5 cup sugar (3/4 per batch) due to the reviews. and the custard sauce...MMM!!! that really made it yummy! next time i won't double that because it made a huge amount! this is seriously good. you won't be disappointed!

Mini Meatloaves

i was never a meatloaf fan until i found this recipe. i am now a meatloaf LOVER! love love love this recipe! though i add more oats, more cheese, and add pureed onion, and garlic to the mix to give more flavor.

Salisbury Steak

i use less beef, and more bread crumbs, and use an additional can of soup to have more "gravy" but leave the rest of the ingredients as is. LOVE this recipe! it is seriously addicting!
