Lentil Soup

This is one of my favorite soup recipes. I like to leave out the onion and add a few more bay leaves. Liquid levels could be adjusted for texture - as is delivers a more stew-like dish. Served with some crusty bread, this soup is a filling meal.

Pita Chips

These chips turned out nicely crisp and seasoned. I left out the chervil and served them with homemade hummus. Excellent alternative to regular pita bread.

Asparagus Cashew Rice Pilaf

This was absolutely delicious! I left out the minced onion and added crumbled feta cheese. Paired very nicely with some blackened salmon and a few fresh tomatoes. There was plenty leftover, and it tasted just as great reheated.

Spinach and Orzo Salad

This is a great summertime salad. I am not so keen on raw onion, so I generally leave that out. Last time I made it, I subbed cashews for the pine nuts. I like to add a bit of fresh basil leaves in addition to the dried as well as a sliced cucumber. Some roasted chicken strips (the packages of pre-cooked work well) round out the flavors nicely, and a sliced tomato add another splash of color that makes the salad come alive! LOVE this dish. Leftovers taste even better....

Best Black Beans

These really are the best black beans. I like to add a little Thai chili garlic sauce too.....and some extra cilantro. Delicious!
