Baked Fish with Shrimp

Easy recipe. I'd add a little bit of lemon or lime juice. Not sure if it's 100% appropriate for red snapper but we both enjoyed it.

Donut Muffins

So yummy. I messed up in the end and mixed the butter with the cinnamon and sugar for the topping, but I dipped them in that and then another round of the dry cinnamon and sugar mixture. Delish!

Oh. My. Goodness. AMAZING. I've always stood by my mom's banana bread recipe but this one takes the cake (and tastes better than cake!) I added an extra banana because I had one more going. And I made 2 loaves so I had to bake it for an extra 20 mins and lowered to 325* (60 mins for 2 loaves it was still not cooked in the middle). Really wonderful recipe!

Juicy Roasted Chicken

This is a great recipe when you're pinched for time. I'd previously made the roasted "sticky" chicken recipe with lots of great reviews but I didn't have 5 hours to spare.....and this one certainly did the trick. I butterfly'd a 5 lb chicken to have it cook faster (a tip from my sister-in-law) and added baby carrots around which got a nice flavoring from the melted butter. I put the celery right underneath the split. It came out very tasty and made for great left overs.

Roast Sticky Chicken-Rotisserie Style

Amazing recipe. It really gives the store bought roasted ones a run for their money. I've never made roasted chicken before. I cooked it in a glass pan as I do not own a roaster (it's in our registry!!) and it came out perfect. Added some cut up sweet potatoes, red potatoes, and baby carrots around and let it roast. Definitely worth making if you have the time. Super yummy!

Roasted Vegetable Medley

Maybe I did something wrong or I just wasn't feeling the flavor of the roasted red peppers but I just didn't like the flavoring of this dish. I couldn't find parsnips at my food store so maybe that would have helped too, but the dish had an overpowering sense of roasted peppers in it, which made it feel more Mediterranean or Italian (and that was not what I was going for). We had a bunch of people over for dinner and this was the dish that was mostly left untouched. Which was fine because the other recipes I made were a hit from Allrecipes.

Gourmet Mushroom Risotto

Having never made risotto in my life (and I love to try cooking everything....) I was a little intimidated. But this was PERFECT. I couldn't find all the right mushrooms, so I used baby bellas and portobella, and crimini as the mushrooms. I didn't use all of the chicken broth, but because the recipe had me adding it in slowly, it helped to let me add how much I felt was appropriate. It came out absolutely PERFECT.

Baked Salmon II

I am pretty picky about the way I cook my fish, and this was by far the #1 EASIEST and #2 TASTIEST salmon I've ever cooked in my life. We had a bunch of people over for dinner and everyone couldn't stop eating it. Super easy and super delicious.

Slow Cooker Beef Stew I

Made this for a dinner on a cold autumn evening when we had a bunch of people over and it was a huge success. Only thing is, I had to add a little more flour to thicken it up, and I added a 1/2 cup of red wine that I reduced to it as well towards the end (I wish I added it in the beginning though). Otherwise, very tasty!

Butternut Squash Soup

I didn't like it much as a soup - way too much cream cheese. I wish I had read the reviews prior saying to only add half of it. Don't get me wrong, it was delicious to dip bread in, but as a soup I've definitely had better butternut squash soup. This was more like a cream cheese soup with butternut squash flavoring.

BBQ Pork for Sandwiches

Super easy, I really thought I'd have to do more, but squeezed in some Sweet Baby Ray's BBQ sauce after slow cooking 2 1/2 lbs of pork for 4 hours on high, put it in the oven just like it said in my Creuset, and called it a day. Never made it before but I'll certainly be making it again!

Gazpacho II

Awesome! I forgot to add the garlic croutons (added plain ones) , chives, and nixed adding the extra veggies in the end. (I was in a rush and just gave it a whirl with company that was hungry) It was still simply amazing!
