Dripping Roast Beef Sandwiches with Melted Provolone

2 words.... Easy and Delicious! I'm a chicken kind a girl and would never order this in a restaurant but to please my husband and teenage son, gave it a try. It was a crowd pleaser! Even my teenage dtr (also a chicken kind a girl) loved it. And again, super easy!

Pesto Chicken Florentine

Delicious! I also used the prepared alfredo which made it easy but oops! I forgot the pesto and it was still fabulous. Definately a do again :)

This recipe was thick and creamy but lacked in flavor diversity. It melded into one non descript cozy flavor but didn't have the zest to make you crave it again. My kids loved it and it was easy and quick to make so I will do it again but I'll have to spike the recipe a bit to step it up a notch or two.

Easy White Chicken Enchiladas

Don't let it's appearance fool you! Although it lacks in color and appears bland, this recipe is packed with flavor. It easily makes 8 tortillas for a 9X13 casserole dish. Lots of filling. I used a jar of store brand white salsa con queso for the topping and it was easy and delicious. For an added touch and pleasing presentation, I topped with shredded leaf lettuce and a bit of red salsa and sour cream. Definately a do again.

Lemon Cream Pasta with Chicken

Wow! This is awesome. My family could not stop carrying on about how flavorful it was. I made it pretty close as directed but swapped out real garlic for the powder and bottled lemon juice for the real lemon. I also used whole wheat pasta. This will definately be a regular at our house. The portion sizes are very large. Actually is more like 6.

Pretty good. Easy to make and ingredients are basics that I keep on hand other than the plain yogurt. I substituted light sour cream in its place. Watch over baking, easy to do.

Spinach Quiche

Great idea but yes, the proportions are off. My suggestions, cut butter down to 2 tblsp., cut the cheese (no pun intended) by half and use 16 oz. of light sour cream instead of the milk. This perfectly fills 1 pie shell and makes it nice and firm. Nothing worse than a soggy or mushy quiche. Another easy thing to do is just saute the first 5 ingredients, Then mix the rest in a large bowl. Combine them in the end and pour in the shell. It helps with consistancy. The feta, garlic, spinach combo is fabulous. Red pepper is a nice touch too.

Asparagus with Cranberries and Pine Nuts

This is easy, delicious, and beautiful on the plate. I definately suggest to saute the pine nuts and cranberries together, remove and then saute the asparagus so the nuts aren't burned. Combine them at the end and top with feta. Fabulous!
