Easy Baked Tilapia

This was delicious and I'll be making it again for sure - quick, easy and even healthy! I made this recipe slightly different than the instructions, using what I had on hand. I did not have any frozen vegetables of any kind so I decided to lay the fish on a bed of rice. I sprayed a pan with cooking spray, and then spread 1 cup of rice (not minute rice) into bottom of baking dish, and added 1 and 1/4 cups water. I laid the still frozen tilapia fillets on top of the rice and seasoned per the instructions, going heavy as suggested by most of the reviews I read. I did not have any fresh lemon so I added a substantial amount of lemon pepper seasoning instead. Covered with foil and baked at 375 for 30-40 minutes and it came out great! Rice and fish cooked to perfection! The ONLY thing I would have done differently is to have added more butter and seasonings to the rice itself, it was good but could have used more flavor. Thanks for such a great base recipe!
