Pumpkin Pie Bars by EAGLE BRAND®

I followed the recipe and made no changes; I took the advice on here and used a glass baking dish. They were OK, but not great. I usually send "leftover" dessert home with my (adult) kids so I won't eat it, but neither really wanted the leftovers. The crust was fine, but we all thought the filling was--well, BLAH! I think part of the problem may be that I make a pumpkin cheesecake that everyone loves--and the cheesecake is much richer tasting. Maybe I need to learn to make pumpkin cheesecake bars!?!

Slow Cooker Pulled Pork

This was a a great recipe to make in advance and serve as my family arrived at different times (from out of town.)I took the advice on here and bought a Boston butt instead of a pork tenderloin- great advice, wonderful flavor. I bought 2 (12 oz) bottles of regular Root Beer, and used about one and a half. I cooked it 6 hours in my slow cooker, let it cool, then shredded it and returned it to the slow cooker with BBQ sauce. It was a real hit--and we're a family that usually sticks to grilled chicken or fish! It's very easy, very tasty, and not $$$ !

Jennie's Heavenly Slow Cooker Chicken

This is an easy chicken dish that tastes like it is a lot more labor-intensive than it is! Rather than using a crockpot,I browned the chicken on the stove, then made the sauce and simmered it on low for about 25 minutes. While it simmered, I made my rice (and salad), and served the chicken over the rice--with the great sauce! I used regular mushroom soup, and threw in some fresh mushrooms. I also made it for a friend who just had a baby, and she & her hubby loved it. When she asked for the recipe, I was (almost!) embarrassed to tell her how easy it was.

Curried Chicken with Mango Rice

Great recipe, and easy weeknight dish. I used low fat coconut milk and skipped the broth; you may need to add a little water (depending on how long you simmer it.) It is one of the best chicken recipes I've found on allrecipes!

Depression Era Corn Chowder

This recipe is made with ingredients that are often in my pantry, low in fat/calories, but the result is just "OK." Anticipating this, I followed the advice of other posters and added some minced garlic, seasonings, chicken, and cream of chicken soup. It was still too bland for me, but for some who don't like a lot of seasoning, it IS easy and filling.
