Spinach Pesto Chicken Breasts

OK, so this time I broke my own rule -- which is to always make the recipe as-is the first time through (how else are ya gonna' know, right?) I followed the other reviewers' suggestions, adding minced garlic, diced onions, and some fresh sliced mushrooms, along with lots more pesto & a little white wine. The results were great! My conclusion is that this is a great base recipe, and has lots of room for versitility. We will definitely keep this as a regular item on our menu.

Kosher Salt Encrusted Prime Rib Roast

I was so intimidated at the idea of cooking prime rib -- who knew it could be so simple? We have used this recipe for holidays & special occasions many times, and it ALWAYS comes out perfect. For those reviewers who thought the results were too salty, might I suggest just using the salt on the base of the pan and not crusting the meat with it. Instead use a good steak rub, and lots of fresh garlic cloves inserted into little slits in the roast. I've made it as-written, and also with these variations, and the results are always fab!

Crispy Rosemary Chicken and Fries

Very moist & flavorful, lots of flavor bang for very little prep time. Fresh herbs are the key, otherwise don't bother! I added sliced carrots just because I didn't want to prepare a separate veggie dish, otherwise made exactly as written. There were no leftovers!

Sirloin Tips and Mushrooms

This was delicious, and I will make it again. I gave 4 stars only because I had to make a couple of alterations, nothing to do with flavor -- added a couple T of flour to thicken the sauce (perhaps tomato paste instead of tomato sauce would accomplish this?); and 1 T. of sugar cuts the acidity of the tomatoes. Also, becuase I used a high quaility beef sirloin, I would brown the chunks and add toward the end of the cooking time to keep them tender, they turned unneccessarily tough in 30 min of cooking. Adding onions in a natural for this good recipe.

Seven Layer Salad

This is a hit! I love that I can make it the day before, so it is great to take to an event or add to a complicated menu, because it's already done! I found the onions a bit overpowering, so personally I will do less next time. Otherwise, it was great as-is!

Rita's Spinach Casserole

I was looking for a way to use up the rest of the 4th of July hamburger -- this was really good! Simple, straightforward ingredients. I would add garlic & onion, perhaps tomatoes w/green chilies for some extra punch, but it was great as-is, and is going in "the book" at my house!

Autumn Pork Roast

I loved this dish! After 35 years of cooking for my family, my purpose in using this site is to branch out from my "usual". This is one of those dishes! Simple, flavorful ~ the cinnamon & applesauce makes the butternut squash "sing"! For those reviewers who found it too sweet, I agree that a little dried Thyme might balance that out a bit, and help bring out the flavor of the pork loin a little more. But I still give it 5 stars as-is! It's going in my "favorites" folder to be repeated soon.

Black Friday Turkey Salad

Wow, this is so different. We loved it because it didn't taste like the rest of Thanksgiving! I served it on a large loaf of Ciabatta bread with dried cranberries -- with a little side salad, it's a meal!

Indeed, as delicious as the reviews suggest. Great as-written. Also as versatile as the reviews suggest. I recommend making it as-is the first time, then making changes that will suit your families taste. Thank you for a great basic recipe -- it goes in the book in our household!

Bacon and Blue Brussels Sprouts

Oh, yummy yummy yummy! This is as good as veggies can get! Love those little brussel sprouts carmelized in a little butter w/vinegar....but this! This is over the top! I served this for dinner tonight as a side dish.....but I had it as a main dish for myself! Thank you for this great recipe!!!

Marinated Grilled Shrimp

This needs more than 5 stars!!! It is SO good, so very very good! Simple ingredients, quick & simple to make, and comes out tasting fabulous. No need to look further for that one wonderful shrimp recipe -- this is the one -- just FOLLOW THE RECIPE (I realize this is difficult for some of you :) and you will have amazing results. I made this for Valentines Day, and we are having it again the next night -- he has not stopped raving about it yet!

Mom's Portuguese Beef Stew

Probably more like 4.5 for me. I made as-written, which is what this rating is based on. Good flavor, good combination of veggies, but lacked a liitle something for me @ the end. Perhaps red wine instead of white? White wine seemed like an odd ingredient for beef stew. Just one T. of McCormick's Montreal Steak Seasoning did the trick, though, it turned out just fantastic, and I will be making this all winter long.

Gnocchi I

Well, wasn't this simple! I could not find gnocchi in ANY of our local grocers, I was delighted to find this simple recipe and an especially good way to use my Thanksgiving leftover mashed potatoes! Use the simple rule I taught my boys when learning to cook. Follow the recipe, and then use your instincts! Make the dough like you would want to eat it. Not too dry, not too moist......make the gnocchi pieces themselves small enough to cook quickly & thoroughly. If they turn out poorly, try again! Dough is one of those things that just takes practice. Says the girl who cannot make a decent pie crust to save her life.......

Slow Cooker Beef Stroganoff I

This was a wow for us, especially with such simple ingrediants. I always make as-is the first time; I might add some water chestnuts next time around just for some texture contrast. But it is delicious and simple just as-written!

Slow Cooker Latin Chicken

This is a very different chicken dish! I think it would be great as a potluck dish, especially since it is so painless to make. We found the flavors grew on us, the more we ate, the better we liked it! Excellent served with cornbread.

Hearty Split Pea Soup

There could not possibly be a simpler way to make delicious split pea soup! I just tasted this at the Oregon relatives, begged the recipe and made it myself for the first time. Their version called for chicken broth instead of water -- but that's the only change I made. I agree that a little milk or cream added at the end makes a difference in the flavor and texture, not just the ratio of liquid. Happy to find the recipe on this site (as usual!). This one's going in my book!
