Kosher Salt Encrusted Prime Rib Roast

I was so intimidated at the idea of cooking prime rib -- who knew it could be so simple? We have used this recipe for holidays & special occasions many times, and it ALWAYS comes out perfect. For those reviewers who thought the results were too salty, might I suggest just using the salt on the base of the pan and not crusting the meat with it. Instead use a good steak rub, and lots of fresh garlic cloves inserted into little slits in the roast. I've made it as-written, and also with these variations, and the results are always fab!

Mom's Portuguese Beef Stew

Probably more like 4.5 for me. I made as-written, which is what this rating is based on. Good flavor, good combination of veggies, but lacked a liitle something for me @ the end. Perhaps red wine instead of white? White wine seemed like an odd ingredient for beef stew. Just one T. of McCormick's Montreal Steak Seasoning did the trick, though, it turned out just fantastic, and I will be making this all winter long.

Gnocchi I

Well, wasn't this simple! I could not find gnocchi in ANY of our local grocers, I was delighted to find this simple recipe and an especially good way to use my Thanksgiving leftover mashed potatoes! Use the simple rule I taught my boys when learning to cook. Follow the recipe, and then use your instincts! Make the dough like you would want to eat it. Not too dry, not too moist......make the gnocchi pieces themselves small enough to cook quickly & thoroughly. If they turn out poorly, try again! Dough is one of those things that just takes practice. Says the girl who cannot make a decent pie crust to save her life.......

Chicken and Gnocchi Soup

Ahhhh, it's lovely, it's just lovely! Delicate, balanced flavors, make it exactly as-written! I added a bit of spice @ the end to suite our tastes, but it is lovely as-is! I could not find gnocchi to save my life, after several attempts I looked up the recipe on this site (Gnocchi I) and used my left-over Thanksgiving mashed potatoes to make the dough myself. So simple! And no, to those reviewers not familiar with gnocchi, it does NOT have much flavor in and of itself, much like pasta, it should take on the flavor of the dish. We will make this again & again, whenever we are in the mood for something elegant and light and lovely!

Brown Sugar Meatloaf

This is a really good basic meatloaf recipe. Nearly like Mom's....You could add & subtract from this for your family's tastes with no problem. I am still on the hunt for my family's perfect meatloaf....but I would make this again, as everyone loved it.

Black Friday Turkey Salad

Wow, this is so different. We loved it because it didn't taste like the rest of Thanksgiving! I served it on a large loaf of Ciabatta bread with dried cranberries -- with a little side salad, it's a meal!

Southwestern Turkey Soup

I would have rated this at 4 stars without the toppings, but once the cheese (I used cheddar), tortilla chips, & I saved the avacado's & cilantro for toppings were added, it turned GOOD into GREAT! This will be my new Post-Thanksgiving Turkey Soup!

Delicious Salmon

This was fabulous! I make salmon ALLOT -- this is my new favorite! It was moist, flavorfull, and simple! Thanks to daughter-in-law for introducing me to this winnning recipe!!! Works well on chicken, also, she tells me.....

Seven Layer Salad

This is a hit! I love that I can make it the day before, so it is great to take to an event or add to a complicated menu, because it's already done! I found the onions a bit overpowering, so personally I will do less next time. Otherwise, it was great as-is!

This was a wow for us, especially with such simple ingrediants. I always make as-is the first time; I might add some water chestnuts next time around just for some texture contrast. But it is delicious and simple just as-written!

Slow Cooker Beef Stew I

This was a good, basic stew, and it was certainly easy enough to throw it all in the crock pot and go. I made this for a "soup night" dinner party, along with 3 other soup recipes from this site, and it filled the "good ole' reliable" spot quite nicely.

Hungarian Mushroom Soup

This recipe was a surprise! Very flavorful, so different from the average mushroom soup. We had some who loved it, and some who did not. I will keep it on hand for those times when I want something unique. It is one to be remembered.

This was delicious! A great recpie for to throw in the crock pot when you are out. Served in a warm tortilla with fresh Pico de Gallo, a simple dollop of sour cream was all it needed!
