Baked Apricot Chicken

This is just average, in my opinion. I made per recipe, and even tried it a second time, but for me it lacks luster. Something is off in the balance of flavors for me.

This is a wow! Simple ingredients, simple preparation, lots of flavor for such little effort. Make it per recipe, no changes needed for an impressive dish!

Beef Barley Vegetable Soup

Loved this hearty vegetable-filled soup! I agree with the other reviewers who suggest that it needs more seasoning. I always make as-is the first time, but I added some extra seasoning at the end to suit our families' taste, including about 3 T. Worchestershire Sauce. I think next time I would either do it all in the crockpot (low 10 hours?) or all in the soup pot. But it is wonderful enough to make it into my "I Love to Cook Book"!

This was, as suggested, very quick & easy -- and, in fact, I had all the ingredients on hand already. Hubby raved over it. I think it will be a good company dish, as it preps like a casserole, but the finished product does not suggest that it is. This one goes in my "I love to Cook Book"!

Crispy Rosemary Chicken and Fries

Very moist & flavorful, lots of flavor bang for very little prep time. Fresh herbs are the key, otherwise don't bother! I added sliced carrots just because I didn't want to prepare a separate veggie dish, otherwise made exactly as written. There were no leftovers!

White Wine Chicken Soup

I was attracted to this recipe because of all the great fresh veggies it calls for.....but it seemed to be lacking something for me in the end ~ some depth, some flavor note. It turned out fine, but did not give us the wow we were hoping for.

Loved this! Super thick, loaded with fresh veggie goodness, so flavorful! It makes plenty, so I added a some chicken apple sausage to the leftovers, it was great, too!

Halibut with Rice Wine

Wow! It's a wow! I bought fresh Monchong (in Hawaii), used this Asian glaze recipe -- it's as good as they serve at Roy Yamaguchi's! Of course, right off the grill by the beach doesn't hurt, either......Simple ingrediants that I can leave on the shelf, simple preparation, great balance of flavors that compliment whatever firm firsh you are grilling. It's going in my book of favorites!

Sherry Sour Cream Chicken

He is still raving about this one! Such a nice change, when every chicken dish does not taste and look alike! Be sure you like sherry, because that taste will carry though; and remember that sherry is rather salty, so don't overseason. I made as-written (always the first time), and we licked the dish clean. I agree that mushrooms would be a good addition (per other reviewers' suggestion), and I like the idea of doubling the sauce to serve over rice. He is already asking if I'm going to make this again :) Thanks Charlene for this great new family favorite!

Rita's Spinach Casserole

I was looking for a way to use up the rest of the 4th of July hamburger -- this was really good! Simple, straightforward ingredients. I would add garlic & onion, perhaps tomatoes w/green chilies for some extra punch, but it was great as-is, and is going in "the book" at my house!

No time to stuff & fluff -- this one was uncomplicated, straight-forward, and simply delicious! Great flavor from just a few ingredients, very little prep, turns out company-beautiful, moist inside, crispy skin outside. It goes "in the book" at my house!

Hearty Split Pea Soup

There could not possibly be a simpler way to make delicious split pea soup! I just tasted this at the Oregon relatives, begged the recipe and made it myself for the first time. Their version called for chicken broth instead of water -- but that's the only change I made. I agree that a little milk or cream added at the end makes a difference in the flavor and texture, not just the ratio of liquid. Happy to find the recipe on this site (as usual!). This one's going in my book!

Kalua Pig in a Slow Cooker

Finally! A way I can make the real "luau" kalua pork! This was simple, delicious, and is the real deal! I live part-time in Hawaii, and I get so hungry for the kalua pork I smell cooking at the Paradise Cove Luau next door every single day.....Thank you for this great recipe I can take back to the Mainland with me! Don't substitute the Hawaiian salt, though -- it's what makes this dish so awesome. I served it with the Sweet Restaurant Slaw from this site, it was fantastic!

We loved it! I give it a 5 for taste, but a 4.5 for execution. Proportionately, it's really got lots of sauce, sort of soup-y. I also agree w/other reviewers who suggest it has too much sugar. But it is light and refreshing and invites you to take another scoop! Really a good basic to have in my book, thank you!

Love butternut squash (so nutritious!); hate the mess of prep -- so....when Costco has the packs of butternut squash already cubed and ready to go -- then I'm on the hunt for some great recipes. This one qualifies -- thank you! We loved it!

Dijon Crusted Halibut

This is a fabulous fresh fish recipe. Granted, we splurged for fresh Halibut, but, oh my! Worth every cent! I disagree with the reviewers who suggest doubling the sauce -- I made it as-written (as I always recommend the first time), and we found it to be perfect! Flavorful, just enough to compliment (not overpower) our beautiful fresh fish. This is going in my "Serve to Company" file!
