Brownie In a Mug

Tankyy have I told you how much I love you?!!! I've made this several times now playing with it each time. Great for those chocolate cravings and there is nothing in the house kinda fix. I think I have it down. Add a drop of vanilla ,use canola oil and top with chips such as chocolate or caramel. Let sit for several minutes and top with vanilla ice cream. This is a gooey chocolate wonder! Thanks so much for sharing this delight!

Campbell's Kitchen Easy Beef Enchiladas

I don't use the rice or soup everything else stays the same. I also only use 5 tortillas because we like them big and fat! Also don't forget to grease your baking dish a bit. These will stick. I spray foil and cover these. We prefer the cheese to stay gooey and the tortilla to stay soft. I bake at 350 for 30 minutes.

Easy Lima Beans

I took the onions out before eating, personal preference. Also I added a bit of salt and pepper and some crispy bacon to top it off. YUM! Bacon makes everything better!!!

Special Edition Peanut Butter Cookies

This is a perfect cookie for me. Not to sweet and since I'm a dunker I was glad it was a little drier, held up in my coffee. These do not spread which make them a thicker cookie, another plus for me. I did not add the coconut because I was out. I did add 1 tsp vanilla. Cooking temp and time is spot on. Thanks for the recipe cheerios!

Easy White Chili

This needs some tweeking. As written to watery. White chili needs to be thick. I added a roux which thickened it up. Topped with nacho chips, cheese sour cream and green onions. Good jumping off recipe.

Walnut Tassies

These are very rich and delicious! I added the flour a little at a time and found I only needed about 1 1/4 cups to be able to form a good ball. I also used paper cups and baked a bit longer than the 20 minutes. Thanks Karyn for the recipe!

Mushroom Orzo

This is so easy and very tasty. I used a regular onion instead of the pearl onions and chicken stock. Next time I make it I will use different varieties of mushrooms. Thanks for the recipe!

Bean Soup

This soup needs a ham base or chicken base for fuller flavor. Once added we liked this soup very much. I also have never soaked beans. I put everything in the pot to a boil then lower heat to simmer and cook for about 2 1/2 hours. Great on a cold winters day!

Turkey Tetrazzini a la Stouffers®

While making this my husband said "I'm not going to like that" He's now on his third helping. This would be equally good made with chicken and make sure you only use the 6 oz of pasta or you will have a dry casserole. I broke pasta in half for a smaller bite. I used buttered bread crumbs per personal preference. I also used a dry sherry. This is a very good and easy anytime dish. I also want to mention this says it's 6 servings. I believe it is 3 maybe 4. Thank You for the recipe!

Apple Dumpling Cake

I made this using zucchini instead of apples. Make sure you peel and cut the seeds out. Then slice as you would apples. I have so many in the garden and these cobbler/ dumpling recipes are great for them. I also mixed the cinnamon with some brown sugar and a pinch of salt into the zucchini then spread in the pan. It is a great dessert so fast and easy. We loved the dumpling crust! Thanks Amy!

Back-Burner Ratatouille

I also made this in the crock pot. I used a little more zucchini and eggplant than called for, turned out great. It's really better the next day or two. I toasted some thin slices of ciabatta on the grill ,put this on top along with chopped pepperoni and mozzarella cheese. Put under broiler for a minute or two. Excellent! Hubs wants it again this week! I'll serve it with a big Italian salad. Can't wait! Thanks for the recipe!

Zucchini Cobbler

This is very good but it is a little dry, nothing that some ice cream or whipped cream won't fix!. It does have a great bottom and top crust. I used a huge zuke that I had and cut like I would apples for pie.. I did add cinnamon to the flour mix and used half white and half brown sugar (personal preference.) No one will ever guess this is zucchini! Thank you Beverly! UPDATE~ This is much better the next day. Gets moist AND is wonderful warmed up with vanilla ice cream!

Spicy Tuna Fish Cakes

This was a great change from the usual. I did sub 1/4 cup dried potato flakes for the whole potato and served with a great tartar sauce from this site along with some green beans from our garden. We really enjoyed these and will make again. Thanks so much for this recipe!

Boiled Water

I was looking for a recipe to use with my Epsom salts to soak my tired ol' dogs in after a hard day of work. I had to tweek it a bit a let it cool for awhile cause the first time I made it I got 2nd degree burns and that kinda hurt but the hospital staff said I should get the feeling back in my toes any day now!

Lazy Daisy Squares

Anything with the word "Lazy" gets my attention. This is an easy tasty moist cake great with a cup of coffee. I only had sweetened coconut so I cut back on the brown sugar. I also melted the butter for the topping so it was easier to spread. Hubby ate 2 large pieces right out of the oven. I will make this again, and soon! Thanks manella for this recipe!
