Refreshing Cucumber Watermelon Salad

I made this for a family get together and substituted cilantro for the mint as that is what i had on hand. I have a cousin who hates watermelon and he thought it was a tomato salad so grabbed a big scoop if it. He was so surprised...he went back for seconds.

Mayo Free Cabbage Salad

I have made this salad 4 times now and only found it this summer. I needed to find some cabbage recipes since I had 8 large heads from my garden. I took some to my neighbors and she said she doesn't really like cole slaw, but she loved mine. I added apples to one batch, and added carrots from my garden for more color. I also add crasins. I made some for Thanksgiving yesterday and I just added some leftover turkey to it and it is delicious. Awesome recipe!

Breaded Dijon Pork Chops

I used only 2 pork chops to test this. I used a Italian bread crumbs because that is what I had on hand. Same with the mustard, I had a garlic mustard that I used. I pan fried it for 4 min. and then baked in a toaster oven for about 20 min. It was so good and easy, I will make this again this week with the other 2 chops I still have!

Cilantro-Lime Dressing

I followed the recipe except for cutting back the honey to 3T and used 1/2 olive oil and 1/2 canola. It was excellant. I poured it overa slaw of green cabbage, carrots and red bell pepper.

Fabulous Fried Cabbage

I ranked this 4 just because I think it is more steamed than fried, but it is delishous. I added in an onion, a few pepper corns and celery seeds, I also used chicken bouillion and cut the water in half. I will make this again. Thanks!
