Good Old Fashioned Pancakes

My family loves this and we usually make 2 batches since one never seems to satisfy all of us. I've always used canola oil to replace the butter and now I am going to try using whole wheat flour, ground oats and a dash of cinnamon. Half regular milk and half non-fat. Yes, I am ready to take this recipe to a healthier level. We'll see how it goes with the kids.

Best Big, Fat, Chewy Chocolate Chip Cookie

Definitely lived up to its name. Used no cholesterol butter and lesser chocolate chips to lessen calories and it still turned out really good! This can be a sub to our fave Mrs. Fields cookies which is not only more expensive but not easily accessible to us here.

Chocolate Chip Muffins

As promised, it's easy, quick and good. To make it healthier,I used brown instead of white sugar, 1 cup of non fat milk and a third cup of canola oil. Added a pinch of brown sugar on top of each. Turned out just the way a muffin should. Only issue I had was the bottom of the muffin sticking too much to the liner. Maybe I should add a bit more oil next time?

To Die For Blueberry Muffins

Baked a batch of 9 muffins and made adjustments based on what's available in the pantry. Substituted Evaporated milk used for baking and cooking instead of fresh milk and this gave it a creamier taste. Used lesser sugar and sub half of the all purpose with wheat flour. Added rolled oats in the batter and crumb for more fiber. Fresh bluberries are a bit expensive here so frozen ones were used instead. Very nice texture and tasty. Easy to make too! I can even forego the crumb topping next time to lessen calories and cholesterol. A tasty, healthy snack for my kids.
