About this Cook
I have always had a passion for food. Growing up in Southern Louisiana, food pretty much equated love. I started cooking 12 years ago when I started college, mostly out of necessity. Back then it was simple - veggies and pasta, a steak here or there, and maybe a cake from a boxed mix. These days, it's all from scratch and no ingredient, ethnicity, or cooking method is off limits.

Super-Delicious Zuppa Toscana
I omitted the bacon, subbed kale for the spinach, and increased the amounts of the red pepper and kale. This was excellent and i will be making again.

Oven-Fried Catfish
I can't believe my tastebuds! This is better than fried! I halved the salt, added 1/4 tsp of cayenne pepper, and served with lemon and tartar sauce.

Spicy Sweet Potato and Coconut Soup
I omitted the salt and sesame oil and used olive oil instead of vegetable oil. I also peel, diced, and boiled the sweet taters until tender rather than baking them. This is very flavorful and has a nice spicy kick (depending on the heat of your curry paste). I'll definitely make this one again.
