Angel Chicken Pasta

We really liked this dish. I cubed chicken breasts first, then made the sauce in a large skillet -- added the chicken into the skillet and baked it like that. The sauce was too thick for us, so I added 1/2 a can of chicken broth. Next time I'm going to try low-fat cream cheese and bowtie-shaped pasta. It was great.

Cottage Noodles and Cabbage

This recipes is delicious. I made minor modifications -- cooked the cabbage and onions till very soft, used 2 cups cottage cheese, and added 1 lb. sliced, browned, & drained turkey kielbasa. It was a very good main dish. My husband (who's not very fond of cabbage) had two BIG servings!!

Irish Soda Bread

This is an excellent recipe....I made it a bit "low fat" by using light sour cream and making buttermilk from skim milk and vinegar. I also reduced the amount of raisens to about 1 cup and it was perfect. I didn't even "knead" it in the bowl, just transferred the batter directly to the baking dish for shaping and baking. Everyone asked for the recipe. Excellent toasted in the morning!

Creamy Pasta Bake

The really was delicious. I made it last night--it was super easy and so creamy. I used light sour cream. The recommendation to top it with mozzarella and cover baked were good calls. My kids were a bit skeptical of the spinach, but ate it anyways!! You've gotta try it.

Salsa Chicken

This was awesome. I stretched the sauce a bit by adding 1 cup of plain tomato sauce to 1 cup salsa then served it over white rice with a side of brocolli. My 4 year old asked when I was going to make it again!

Pasta with Kielbasa and Sauerkraut

This was surprisingly good....the ingredients are kind of weird, but do go together nicely. I thought it tasted better the longer it sat. Was excellent as leftovers.

Cinnamon Hazelnut Biscotti

THESE ARE AWESOME!!! I made these last week for a baby shower and everyone RAVED about them. They were easier than I had expected. I substituted slivered almonds and rough diced them to make it easier to cut. You HAVE to try these. Next time I'm going to drizzle a bit of chocolate over them.

Connie's Zucchini "Crab" Cakes

These were very good. I worried about the zucchini being too watery, so I shredded it into a collander and added about 1/2 tsp. of salt. I let it drain for about 30 minutes (pressing slightly with wooden spoon)...yielding about 2/3 cup water. I will definitely make these again.

Chocolate Zucchini Bread I

AWESOME, AWESOME, AWESOME!! This replaces my "usual" chocolate zuchini bread recipe. It was so moist and just delicious. The kids ate it like CRAZY!! Next time I'm going to replace 1/2 cup of the oil with applesauce to make it a bit healthier. You HAVE to try this!!

Eggplant Parmesan II

This was ok. I think cut my eggplant too thin as it seemed to lose its flavor in the breading. I tried it again cutting the eggplant thicker and it came out terrific. It really does cook down during the baking process. I always shy away from eggplant parm because of the high-fat frying process. I use this method now.

Rick's Special Buttercream Frosting

This was great. I used 1/2 butter and 1/2 crisco and about 6 cups of sugar (and still wasn't too sweet). This frosting has an incredibly smooth spreading consistancy, yet is strong enough to hold a shape if piped as border/edging. It makes a ton, too. I frosted and decorated a 4 layer 8-inch cake and still had about 1-1/2 cups leftover. THIS IS MY NEW FROSTING OF CHOICE!!

Pesto

This was very good. It was my first attempt to make/eat pesto. I toasted the pine nuts (as someone else recommended) and omitted the parsley. Next time, though, I'm going to try a little chicken broth and a little less oil. It was just a bit too oily for my liking. I tossed it with a lb. of fetuccini and cubed chicken breasts and it there was a bit leftover. I'm looking forward to making it again.

Spaghetti Torte

I just made this for dinner....it was ok. For the work that goes into making it, the final product was a bit disappointing. I added a bit of garlic powder and salt to the cheese mixture and served with a side of sauce. I probably wouldn't make it again.

Mexican Rice Pilaf

This was good...I made a few modifications -- no diced red pepper or cheese and used 1 cup tomato sauce, 3 cups beef broth, and 1-1/2 cups regular white rice. I'm a REALLY bad rice maker...my husband thought for sure this was a packaged mix because it was good and he knows I can't make rice!!!

Alfredo Blue

This wasn't bad...I substituted LOL Fat-Free 1/2&1/2 with a little flour for thickening...I tossed with cheese tortellini. It was a bit much for an entire meal....would be good as a first course.

Easy Chicken Tetrazzini

This was very good. I was worried about the salt (from the other reviews) so I put in just one boullion cube....two probably would've been a little better. I also reduced the water by 1/4 cup and added 1/3 cup Marsala wine (didn't have any sherry). Lastly, I added a butter/plain bread crumb topping. My 4-year old and 5 year-old practically licked their bowls clean!!

Taco Cornbread Pizza

This was great. I served with sour cream, salsa, shredded lettuce, and diced tomato on the side. I used only 1 cup of the cheese on the top of the pizza only (to cut a few calories). This is a keeper!!

Pumpkin Cookies V

These just came out of the oven -- they smell awesome and taste just as good. I made my cookies with about 2 Tbs. of batter and they needed to cook for about 16 minutes. The batter yielded about 5-1/2 dozen cookies (but I'm not complaining!).

Barbequed Marinated Flank Steak

This was very good. I didn't have any honey so I substituted brown sugar. I marinated for about 30 hours. I think the longer the marinade time the better!!

Flank Steak With Horseradish Sauce

I used a different marinade, but this horseradish sauce is AWESOME. I increased the horseradish to 2 Tbs. and substituted 1 tsp. onion powder for the green onions. It was great with the flank steak and even delicious with hash brown potatoes (I'm going to try on baked potatoes next).
