Peppercorn Ranch Pasta

I was skeptical...but this was GREAT. I used all leftovers from the fridge -- spaghetti noodles, steamed carrots and cauliflower. I omitted the onion (didn't want) and brocolli (didn't have), substituted red bell pepper for green, and used lowfat "parmesan peppercorn ranch" dressing. I've been dieting and made this for a quick lunch yesterday. Give it a try. The pasta really mellows out the peppercorn taste in the dressing. I'll save all my leftover dinner veggies from now on to use in this salad!

BBQ Chicken Pizza

I've been wanting to make this for a long time. I mixed my BBQ sauce right with the shredded meat of 3 breasts before then spread it over the crust.....sprinkled it with a diced fresh jalapeno (didn't have pepponcini)and covered with mozzarella and cheddar (didn't have cilantro or red onion). IT WAS GREAT!!! I can't wait to try it again WITH the red onion. The hot pepper gave it just a bit of heat. Went great with the chicken.

Slow Cooker Venison Roast

While I'm not a venison fan, I made this for my husband and it smelled GREAT! I did try one bite of the meat and did not think it was too salty; it has a good flavor to it. I served it with steamed carrots over egg noodles. The only change make from the recipe was that I added one soup-can of water.

Caramelized Baked Chicken

While the glaze was good, cooking it in "fatty" type of chicken parts made it way too greasy. I tried this again with boneless skinless breasts instead of chicken parts with skin. It still came out with a runny sauce. I had reserved some of the glaze, thickened it on the stove top, and serve it as a dipping sauce which was good.

Party Pinwheels

These were very good. I think they were a touch salty...next time, instead of lessening the ranch mix, I'm going to add one more block of cream cheese (and increase the other ingredients accordingly). I did not use celery. I combined all the ingredients together and spread once instead of sprinkling the toppings over the cream cheese mixture. These are VERY pretty looking appetizers. I will surely make these again. This made eight pinwheels using 10-inch tortillas.

Giant Ding Dong Cake

The flavor of this cake was very good, but I guess I'm not a bit "Ding Dong" fan....I thought there was too much cream filling in one place. I made this again but as a 3-layer torte with half the cream between each layer and covered with the chocolate glaze. As a torte -- it was one of the BEST cakes I've ever made. The comments were "which bakery did you get this from?" -- I love refrigerated chocolate cake and this one is AWESOME!

Better Than Sex Cake I

AWESOME!!! No one had a bad thing to say about this dessert.....it is sooooooo delicious. I baked my cake in a 10x14" pan (I thought a 9x13" would get too full with all the toppings) and it worked out well. Everyone wanted the recipe. I cannot wait to make it again. Good for the holidays but also good for any kind of potluck event.

Irish Cream Truffle Fudge

Everyone raved about this fudge, but I did make some alterations to the recipes. I decided to keep the white chips separate (to make the fudge look nicer) so I used 4 cups chocolate chips for the base layer and 2 cups white chips for the topping. I also didn't add nuts at all. It does make more than a 8x8" pan...I used a 9x11" and it was a good inch thick still. Nice holiday treat.

Pumpkin Cranberry Bread

I've been making this same recipe for years. I always use fresh cranberries (which I keep in the freezer and add directly to the batter) and substitute applesauce for half-to-all of the oil. It still comes out moist, just a little less heavy. I love this bread!!!

Reese's® Chewy Chocolate Cookie

These just came out of the oven (at 10 am) and we are eating them for breakfast!!! They are soft, yet not falling apart, and SO TASTY!! I buy the Betty Crocker chocolate cookie w/PB chips pouch mix and have been trying to find a "scratch" recipe that is as good. I made 2 TBS. sized cookies and baked for 12 minutes and it still make 4-1/2 dozen cookies.

Slow Cooker Cranberry Pork

This was great. It wasn't too "cranberry-y." My husband doesn't like cranberry anything and thought that this was just a great BBQ sauce until I told him. HE said it is a definite keeper. I've used a bone-in pork roast as well as boneless pork ribs and cooked on low for about 6 hours and it was incredibly tender. The "gravy" was nice on white rice.

Aunt Betty's French Dressing

I needed 1 cup of French dressing for another recipe and didn't have any in the fridge. I found this, tried it, and LOVED it. I used it in my recipe and on my salad for lunch today. I used cider vinegar and whirled it in the blender until completely smooth....I was really happy with its thick consistency. It took about 5 minutes from start to finish and is better than ANY bottled version.

Flank Steak With Horseradish Sauce

I used a different marinade, but this horseradish sauce is AWESOME. I increased the horseradish to 2 Tbs. and substituted 1 tsp. onion powder for the green onions. It was great with the flank steak and even delicious with hash brown potatoes (I'm going to try on baked potatoes next).

Barbequed Marinated Flank Steak

This was very good. I didn't have any honey so I substituted brown sugar. I marinated for about 30 hours. I think the longer the marinade time the better!!

Pumpkin Cookies V

These just came out of the oven -- they smell awesome and taste just as good. I made my cookies with about 2 Tbs. of batter and they needed to cook for about 16 minutes. The batter yielded about 5-1/2 dozen cookies (but I'm not complaining!).

Taco Cornbread Pizza

This was great. I served with sour cream, salsa, shredded lettuce, and diced tomato on the side. I used only 1 cup of the cheese on the top of the pizza only (to cut a few calories). This is a keeper!!

Easy Chicken Tetrazzini

This was very good. I was worried about the salt (from the other reviews) so I put in just one boullion cube....two probably would've been a little better. I also reduced the water by 1/4 cup and added 1/3 cup Marsala wine (didn't have any sherry). Lastly, I added a butter/plain bread crumb topping. My 4-year old and 5 year-old practically licked their bowls clean!!

Alfredo Blue

This wasn't bad...I substituted LOL Fat-Free 1/2&1/2 with a little flour for thickening...I tossed with cheese tortellini. It was a bit much for an entire meal....would be good as a first course.

Mexican Rice Pilaf

This was good...I made a few modifications -- no diced red pepper or cheese and used 1 cup tomato sauce, 3 cups beef broth, and 1-1/2 cups regular white rice. I'm a REALLY bad rice maker...my husband thought for sure this was a packaged mix because it was good and he knows I can't make rice!!!
