Quick Pickled Eggs and Beets

These are yummy. I increased the vingear to 3/4 cup, decreased the sugar to 1/4 cup, and added a small sliced onion to the mix.

Honey Mustard Dressing I

I used only 1/4 cup light mayonnaise and no soy sauce. This was delicious. My 4-year-old used it as a dipping sauce for her chicken nuggets. The dill gives is a nice look.

Beefy Manicotti

This is a good recipe. I never considered stuffing manicotti with beef, but I'm glad I tried. I didn't use the sauce in the recipe (used another favorite) just the meat mixture. Even my kids (4 & 5) liked them.

Lemon Horseradish New Potatoes

I thought these were good, but not spectacular. I served them with swordfish and they went nicely together. Next time I'll bake them at a slightly higher heat to try to get them a little crisper (and to shorten the cooking time).

Worm Cake

These are cute. I made them for a kids' Spring party. I used two worms on each cupcake -- 1 across the middle, and 1 cut in half with each half sticking in opposite sides of the cupcake (looks like a worm going in under and coming out from under the other worm). The kids thought they were "cool." My cake mix yielded 18 cupcakes. I barely used 1 cup of "dirt" crumbs.

Cajun Chicken Pasta

This was very good, but to us was sorta plain tasting. I added twice the called for cajun seasoning and a BUNCH more salt and garlic powder. With those additions it was a nice dinner.

Mustard Pickled Eggs

I made these yesterday and had to try one today. I've never had pickled eggs before; these taste great and look terrific. I increased the sugar to 1/4 cup and only used 1 cup vinegar (I used small eggs).

Sour Cream Apple Pie Deluxe

This was very good. A bit sweet for us, so I'll just reduce the sugar next time. Also, I baked it much longer (almost 45 minutes) to get the apples really tender. I don't like them at all firm. A great change from regular apple pie -- definitely a keeper!

Moussaka

I never had moussaka before, but this was very tasty. I made some minor modifications -- I used feta cheese instead of Parmesan, added 3 beaten eggs to the bechamel sauce (puffed up nicely when baked), and eliminated any extra oil/butters (I broiled the eggplant with just a spritz of cooking spray). I even used skim milk for the bechamel sauce and you wouldn't even know the difference. This is a great company dish. It presents beautifully at the table.

Irish Cream Bundt Cake

This is a great cake. Just made it for my father's 59th birthday. One night weekly we get together and have coffee with Bailey's so this cake was perfect for him. The liquor taste is subtle. I did "soak" the cake in the glaze in the cake pan. It made a wonderful sugary-crisp coating. This is a great cake for when you don't want to be bothered with a frosting.

Chicken Flautas

These were easy to assemble. I added some additional seasonings and one finely diced jalapeno to give it some "punch" -- there were no leftovers. I'm not sure I'd make them again though.

Screaming Potatoes

Hot Onion Pinwheels

More flour is definitely needed -- I used almost 4 cups. Any too many onions -- I used 3 and still thought it was too much. Using 1/2 tsp. of the crushed red pepper packs quite a bit of heat -- try 1/4 tsp. the first time. My husband LOVES homemade rolls and bread, but he didn't like these.

Wonton Soup

This was pretty good. I used beef instead of chicken broth. It was not too far off from the soup I buy at the local Chinese place. The wrappers were thinner though than those from the restaurant....making the wontons less substantial (no reflection on the recipe). A good soup to accompany a homemade Chinese meal.

We really liked this. I didn't have any fresh spinach so I just omitted it. I used reduced-fat cream cheese instead of marscapone. My 4-year-old asked for seconds!!

A Farewell to Basil Fettuccine

I really liked this. Although my pasta machine had trouble cutting it into fettucini, I let it dry as whole sheets then cut it into 1/2"-ribbons by hand. I tossed it with a delicious sauce of 4 Tbs. butter, juice from 2 lemons, shallots, salt & pepper, and 1 egg yolk. Sorta like a modified hollandaise I guess. I would definitely make this again. It's a very pretty pasta dish.

Arroz con Pollo (Chicken with Rice)

This was just ok. I wouldn't make it again. For the effort gone into it, the results weren't as good as expected. My husband said, "This is ok -- for a box mix anyway."

Baked Sweet Potato Sticks

This is a good idea, but I didn't like them as sticks with skins. Next time I'll peel the potatoes and slice them into rounds. I added additional seasonings -- 1/2 tsp. salt, 1/2 tsp. garlic powder, and 1 Tbs. brown sugar for 4 average sized potatoes. The flavors and textures were great, so I will DEFINITELY make these again.
