Sloppy Joes II

I've been making this for years now. Instead of garlic powder, I add a few shakes of Worchestershire sauce. I grew up eating a non-sweet, chunky tomato-based sloppy joe...this is how my mother-in-law makes them. Great with a side of corn and tater tots... By the way, I always serve potato chips with this meal and my husband and kids eat them ON the sandwich. I tried it last month and it is an interesting addition to the sandwich! DON'T PASS UP THIS RECIPE!!!!!

Oven Fried Chicken II

I baked 4 thighs and 5 legs at 400o for 50 minutes (the family was starving!) and they were done perfectly. This is a tasty and EASY recipe. I will certainly make this again. When they were finished baking, I put them on a brown grocery bag (to drain a little of the oil) on a baking sheet and put them back in the turned-off oven to keep them warm until the rest of the meal was complete.

Slow Cooker Lasagna

We didn't care for this much. It was rather dry and REALLY cooked around the edges (bordering burnt) and it only cooked 5 hours on low. My husband will eat anything and lasagna is his favorite....he didn't finish his plate. I won't make it again.

Eggplant Croquettes

These were quite tasty. No need for a sauce -- they had good flavor and moistness on their own. An nice veggie side dish alternative. I fried them in a non-stick pan with just a couple tablespoons of olive oil and they came out crispy and nicely browned.

Creamy Penne Pasta

I liked this (as did my 5 year old)....I added a finely diced onion with the garlic and sauteed first then added the herbs and two diced fresh tomatoes. I also used low-fat cream cheese. I didn't think the sauce was too thick (it held the herbs and stuff nicely to the penne) -- until it cooled off....just add a splash of milk to thin.

Cream Filled Cupcakes

Everyone liked these at the party -- they were convinced I BOUGHT them. I used box mix for the cupcakes themselves and the frosting suggested by OCEAN011. I piped the filling in from the top, too, and that worked really well. To make them look "fancy" I piped the frosting on the top in a circular pattern. I thought they were a bit messy to eat, but the kids really liked them.

Tortilla Rollups II

These were very good. The only change to the recipe was to double the salsa and add 1 oz. sliced olives (it gave them a nice color). I made a double batch of the filling and ended up with 11 rollups.

Zucchini Pineapple Bread I

This is very good. My 4-year old just ate a thick slice warm from the oven. My only deviation from recipe was using undrained crushed pineapple (juice was about 1/2 cup) and only 1/2 cup oil. The bread is still very moist.

Cup of Everything Cookies

These were ok, but with all the cookie recipes out there, I don't think I'd make them again. I used 2 Tbs. of batter for each cookie and I ended up with about 5 dozen cookies!!

Yellow Squash Casserole

This is a GREAT use of yellow squash. I've tried many different squash casseroles in the past couple of years and they always are lacking in flavor. This one doesn't. I used reduced-fat Ritz crackers and cheddar cheese to help with the calories. This is a keeper!!

Antipasto Squares

10 stars would be appropriate!! These are just terrific. I made a single batch (wish I'd tripled it!!) cut it into about 40 squares and they were gone in 15 minutes. I served them while still warm (but not hot).

Red Skinned Potato Salad

I used plain peeled potatoes, red onion for green (didn't have any), and 1/2 light may and 1/2 light sour cream. It was very tasty. Even my mother liked it -- and she is pretty picky!

American-Italian Pasta Salad

I omitted the peas, parsley, and celery and added halved cherry tomatoes, julienned green peppers, as well as some diced ham and provolone. The dressing was good and was a nice change from the typical Italian dressing pasta salad.

Jay's Signature Pizza Crust

This was a good crust....the dough was quite sticky and needed more flour (even when pressing into pizza pan). It is an easy dough to work with (stretches nice) and has a nice "light" feel to it.

Cinnabun Cookies

These have a good flavor, but they didn't hold a shape very well. I tried cutting them thin and thick and it didn't matter much. With such great reviews, I was expecting FABULOUS cookies. Too much work for the end result...sorry.

Golden Sweet Cornbread

This is very good cornbread. I've always used the "box" mixes because I couldn't find a recipe that tasted "as good." This one does. As far as the crumbliness goes -- if you cut it when it is very hot, it'll crumble; if you let it cool a bit, it holds its shape just fine. A simple recipe too.

Bacon Cheeseburger Pasta

This was REALLY good. I was surprised that the ingredients did go together. I didn't read the directions well enough so I made several changes (without even knowing it). I used 1/2 lb. bacon, 1 lb. pasta shells, 1 diced onion, 1/3 cup BBQ sauce, 2 cans tomato soup, and 1 can cheese soup along with the ground beef. I mixed it all together and transferred it to a 9x13 baking dish, covered it with the cheddar cheese, baked it for 30 minutes at 350 and it was GREAT. My small children GOBBLED it right up.
