Eggnog Quick Bread

This is yummy! It smells and tastes like eggnog. I lightly toasted it then spread with a touch of butter for a nice breakfast with tea. If you like eggnog, definitely try this!

Easy Red Beans and Rice

This is really good! It's a simple meal with lots of flavor. I used Chorico instead of kielbasi, quite a few shakes of Red Hot sauce, and added 8 oz. tomato sauce -- we like things spicy and "saucy." Next time I would add more green peppers though, they add a nice flavor.

Creamy Italian Dressing II

I increased the mayo by half and doubled all the remaining ingredients (to get it to a nice "tossable" consistency). Definitely make this at LEAST 1 day ahead to let the flavors blend. I made it 2 days ahead the the taste was so much better!

Balsamic Glazed Carrots

These were a nice change of pace. I didn't saute the carrots, boiled instead, then tossed with the sugar and vinegar (and a couple pats of butter). They smelled delicious!

Luscious Spinach Artichoke Dip

This dip is delicious. I substituted marinated artichokes to give it some zing and eliminated the cream cheese (upping the mayo to 1/2 cup). I make this a couple of days ahead to let the flavor blend (before baking)...it makes a difference in the dip's final taste.

BUSH'S® Florentine Cannellini One Pot

This is a great winter meal. I'm making it AGAIN tonight...we're in the middle of a snow storm! The only change to this is that I use water and chicken boullion cubes and I used black beans, red kidney beans, and black-eyed peas. A very good soup.

Libby's® Pumpkin Roll with Cream Cheese Filling

This is an awesome recipe -- I've been making it for years. It's really not that hard, just time consuming. This year I substituted maple extract for the vanilla in the filling and it was truly EXCEPTIONAL. The maple flavor was a perfect complement to the pumpkin. I will always make it this way from now on.

Herbed Italian Loaf

I added 1 tsp. powdered garlic to the bread. I mixedkneaded in my kitchenaid and used regular flour. The resulting loaf was very nice....good height and texture. I will try it again as a plain white loaf as well. A keeper.

Pumpkin Roll I

I've been making this for years as is....but this year I decided to add 1 tsp. maple extract instead of the vanilla to the filling and it was OUT OF THIS WORLD! It was a much better match of flavors between the pumpkin/pecan cake and the filling -- YUM YUM YUM!!

Great Pumpkin Cookies

I made these into bars instead of cookies. At first, they came out way too cake-like to be picked up and eaten, but as they sat they became firmer. They are a great snack for the kids (and moms and dads, too!).

Pumpkin Fluff Dip

THIS IS SOOOOOO GOOD!!! Absolutely everyone raved about this....I served with cinnamon graham crackers, gingersnaps (my favorite), as well as apple wedges (straight from the orchard). This does make a HUGE amount -- my party only had 6 people so I have LOTS left. This would be good for a large crowd -- perfect for fall parties.

Apple Crisp II

I messed up the topping (I know, real hard!), but even so it was delicious. I can see how much better it would even taste made properly!!! I usually make my crumb topping with solid butter, but using melted made it easier (no need to have room-temp butter hanging around). I did not add the flour or sugar to the apples just a tsp. of cinnamon -- we like the apple part slightly tart. I will definitely make this again (the right way!!).

Stuffed Kielbasa

I was hesitant to try this...a weird combo of ingredients. But to my surprise, it was quite tasty!!! I had leftover mashies in the fridge that would have otherwise been tossed. I saw this recipe and thought....how bad could it be?? I used frozen lite kielbasi thawed just enough to be split, leftover mashies, a sprinkle of garlic powder, and the mozz. cheese. They were a GREAT lunch meal!! I used sauerkraut only on 1/2 as my hubby doesn' like it....but he ate one with and gobbled it right up! TRY IT!

Slow Cooker Chicken Cacciatore

This was a good slow-cooker recipe. I added a 14 oz. can of diced tomatoes with the juice and 1 Tbs. Italian seasoning....otherwise the recipe was fine. Yesm the sauce was thinner than direct from a jar, but it still stayed with the pasta just fine. A tasty recipe to come home to.
